Hi Lola. Funny I just got an email from my sister (we live in Colorado) and she mentioned she has been buying the Claxton Fruit Cake at King Soopers here. Said she remembers it from when we had bread delivered. We all loved the fruit cake 🎂. Now, I have to go to KINGS and try to find me one also. 😋

If you just put in cup of milk with half cup of chocolate mix it dries quickly and tastes great. Remember, you're removing the water when you freeze dry, so as long as you can spread it on your tray, it will dry quicker.

Merry Christmas to all! Today I will be spending the day with my children and grandchildren. This is such a crazy time. Two people in the family were exposed to covid and we had to wait for the results before finalizing plans. Luckily they were negative Yeah!! I always cut my eggnog with half milk because it's so rich and sweet. Oh also, I add bourbon (don't tell anyone), and nutmeg.

Merry Christmas! I am one of those who has never cared for traditional fruitcake so a number of years ago came up with a “updated”version. I reduce the candied fruit to a minimal amount and mincing it up into finer pieces so you get more of a hint of it than biting into an actual chunk. Then in it’s place I add chopped dried fruit like raisins, apricots, apples, cranberries, etc. I’m not big on rum so instead I doused it with orange flavored liquor. It works best if it is made no later than October so there is time for the liquor to do its magic. While given the option I would choose to eat homemade cheesecake over any fruitcake 100% of the time, for me, updating the fruitcake makes it much more palatable. What I think would be an interesting snack to freeze dry would be apples and cheese. Everyone knows that apple wedges with a slice of cheese makes a wonderful snack. Make a cheese sauce or fondue using your favorite cheese, dip the apple in it and then freeze dry. If you want to go all out groovy, there i this wonderful Norwegian cheese (can be found online if not in real life) called Geitost. It has a distinct caramel coloring and yes, you can definitely taste the combination of cheese mixed with caramel. If I ever get a freeze drier I would definitely melt down some of that, dip the apple in it and freeze dry it. But for those who want something more easily accessible they could easily do it with a nice cheddar cheese. OR you could even use apple pie spices on the apple before adding the cheese so it would taste like freeze dried apple pie with cheese. . . . I could have so much fun with a freeze dryer! my grandmother made fruit cake onr year and when you unwrapped it you woyld get a contact high. she used so much rum you had to be careful. i was eating mine in march and it was still very moist. really miss her, she was a great cook for complicated things, potato sausage, swedish treats.

Happy holidays to both of you and the girls. Candy cane is crystalized sugar. It has very little to no water content, so it's already "dry". Cutting those milk based liquids with water and/or skim milk was a good idea. In simple terms water and fat mixed together kind of form water skinned and fat filled micro balloons which burst when the water is "dried" out. Yes I know - to much info.

I love Jelly Belly too!! They were not available here in the UK the first time I visited friends in California- in about 2004, so had never heard or tasted them. I tried a small box and never looked back. When I came home from that trip I brought back two huge boxes of them to share with family and work colleagues. I was working in a hospital medical library at the time which suddenly became very busy!!! 🤔🤔🤔😂😂😂 Doctors, nurses auxiliary staff all came in to make up the various flavours. So my family box also made its way to work with me. 😊😊 After that every time I visited my friends boxes of Jelly Belly’s and Sees Chocolates came home with me. Now we can buy them here and they are still a huge favourite, although now I am retired my family are able to have more for themselves. 😂😂😂😂😂

When i drink egg nog i cut it with milk or 7 up. I ran a batch of straight egg nog in my freeze dryer and it came out beautiful. We powdered it up so we can just add it to some water, stir it up and drink it this summer

Kevin preserve the fruit cake by soaking it in burbon or rum or whatever is your preference Have it wrapped in plastic wrap or muslin and put it in a sealed container. Open it every once in a while and enjoy a piece, then add some more rum and put it back in the container. It will keep for well over a year if you can leave it alone. Ps the one is way too small lol. I like a good fruit cake. My grandmother's used to make it every year in late summer for Christmas. They used to put a syrup with brandy in it all over them once or twice a week. Yummy

If you do the creamed egg nog, then also consider a full cream (no milk) hot chocolate. Whether FD or a hot drink, whole cream hot chocolate is superb. Even making a creamed egg nog in the hot chocolate - is a totally awesome real meal deal - or a FD crunchy treat. Whether one puts in nutmeg, cinnamon, or peppermint oil just blesses out the whole experience. Doing a FD Norwegian wassail is a true taste treat - and super healthy. The FD fruitcake will be like a crunchy English biscuit with fruit. Having these FD products with a mulled wine, wassail brandy or cognac - and no one will have any issues about the fruitcake - or anything else !

Didn't get a chance to watch till day after Christmas, too busy! The candy canes were no surprise. After seeing/hearing about the results, I doubt I'd try freeze drying fruit cake. Besides, I love it's moisture. I never would have thought about freeze drying any liquid. But, the eggnog & hot chocolate looked like the big winners here. Hope you all had great birthday (Jesus) celebration!
