it is a port in the cornish coast. it is the name for the sauce because the crabs com from that location.

The title is not very clear. These may be michelin star chefs cooking more basic meals for a restaurant that does not have michelin stars. However, if this cooking is worthy of a michelin star I have to say I am shocked. This is basic cooking and by comparison that would mean there are countless undiscovered michelin star restaurants out there...

It's amazing that this kind of cooking gets a michelin star. Having worked as a chef for 12 years I find this cooking to be so basic and rustic. I have not tasted it and it might have some wonderful authentic tastes, but still, to have a michelin star I allways thought you had to show flare, creativity and a mastery of taste and texture.

+TheJourneyman you right, this dish is probably not that creative and beauty. But cuz it's one star, so it should had a wonderful taste and texture. You saw the God of Sushi, 3 stars and everything is the basic stuff. That master was keeping everything in a simple way to maintain sushi culture.

Thanks for your comment. I saw the god of sushi and have been in Tokyo dinning in different locations. While his cooking is simple on frist glance, it is incredibly complex under the surface. The rice he uses is different from any othe sushi rice used in Japan and takes 2 hours to cook under pressure because of its hardness. The products are cooked to perfection and displayed in a simple yet extremely elegant fashion. Unfortunately, the food presented in this video does not compare in any way. The fish is overcooked and the products are displayed on the plate in a careless fashion. I dont know about the taste, but the food looks unapealing.

you right. compare with others, this one is not worth the Michelin. Looks like a $$$ or $$$$ restaurant dish on Yelp....
