Because since the late 90s and early 2000's when analogue was swapped over for digital, all the human nuances of playing are missing and sounds overly polished, they sound rather manufactured and 'overdone'. Eg, the natural timing of a drummer would slightly speed up and down in a song, fractions of a second. Digital is all perfected and corrected and you can hear the differences it has on a song. Rick Beato talks about this in his videos on 90's rock and metal recordings and what made particular albums 'classics' compared to music released now.
