My grandma's recipe specifically says not to drain the juice from the can of beans, it acts as a thickener and gives the soup a really silky texture. My brother and sister are both vegetarian so I made some last week when they came to visit, it was a big hit.

As a high carb eater for many years now, minestrone soup is my absolute favorite soup. I enjoy the simplicity of this version, it doesnt need to be crazy, its just good on its own. Me? I just add a little thyme and always put too much pasta (even without pasta its delicious) lol. Thanks guys

I’ve never seen those noodles before. I like that they are so big and I think it makes your soup look yummier because of their size. Can’t wait to try this one!

Wowza! So delicious! I used a total of 8 cups of vegetable broth & I added an extra 1/2 teaspoon of both the oregano & basil. Perfecto! Thank you!

I just made a triple batch of this today, but since it's mid October, I left the potatoes out and subbed in Mexican Gray summer squash and green beans. So great! And it freezes VERY well, so we can have summer in January if we want. Thank you SO much for all your videos

I eat soup all year around. My boss always makes fun of me when I'm eating soup in July. I usually add some nutritional yeast and miso for extra flavour when I make minestrone. I feel like you can't go wrong with any vegetable soup; no matter how you make it, it's going to be delicious!

A fantastic minestrone soup recipe Joey. Sadly in some parts of the UK there's been storm's that have caused property damage and loss of life. It's possibly linked with climate change/ global warming because storms are getting more frequent and worse. Love 🥰 the video and love 💕 Joey.
