I have been under high pressure for years. I finally retired at 50. I didn't know what to do. I thought I was an OK cook, but nooooooo. The chef started me all over! My anxiety and stress have gone away because all I have to do is cook for the hungry children in the neighborhood and teach them, too. They say you will have to change your career 5 times. Well, after being in well-paid, high-stress jobs, NO KIDDING Chef changed my life. I found a passion without politics. I was inspired enough to go to a NYC culinary school. I do not like NYC. Before all the pressure, I was at war, too, in Afghanistan. Just too much. I have had enough. Now, cooking is an art and a culinary science. You must know the chemistry of how things blend together. After a month of trying Chef JP's recipes, which I still use voraciously, he was the one who inspired me. Now that I am a chef, dishes are much better. but still, I would dare not compare myself to Chef. The neighborhood kids in Dallas all want to come over. I no longer have PSTD and need no medicine. Thanks to God you inspired me. Now I have a happier life. Thank you, chef, for curing me with inspiration. I no longer feel bad and plan meals all week. 😪

I made this yesterday to go on my first-ever cheesecake. I bought the frozen fruit, as recommended, measured carefully when adding the Gran Marnier. I poured some of the sauce over the cheesecake, decorated with a few fresh raspberries, and sprinkled a little powdered sugar over the top. My wife was so impressed she took a picture of it! I have now lost count of the Chef JP recipes I have made.

After watching several of Jean-Pierre cooking video, I decided I have actually learned something worthwhile compared to other videos. His dishes are elegant and presentable when entertaining guests. He is also humorous during the cooking. I enjoyed watching his videos!

I was wondering about your accent, Jean-Pierre, and I guessed correctly. I figured you from the south of France near Italy. That also explains your cooking. That's the center of it all when it comes to the best cuisine in the world.

I love making coulis of all types. Mixed berries is perhaps the most known and used, but there are also countless other fruits and vegetables that make wonderful coulis. Living in South America gives me access to a wide variety of amazing tropical fruits and vegetables all year round that are unknown in Europe, the US or other countries. Jean Pierre, in my travels, I have seen fruits like LULO, also known as naranjilla, in specific Publix or other Latin markets. I highly recommend the lulo coulis, also maracuyá (passion fruit), mango, guava. I add vanilla infused bourbon or whiskey in mine and they are phenomenal.

I love the fact that you are so real with your cooking and your years of experience. You talk about doing all the things that I have done. Sometimes, I end up stained and covered with whatever I'm cooking. But, still, we persevere because we love to cook and eat. Of course, it's your chosen vocation, but I feel you have a real life experience and relationship with your cooking that shows your love for the craft. I enjoy your videos very much. Had some (2 kilos) strawberries and raspberries in the freezer, not knowing what to do with them. Then I stumbled upon this video. Just made a nice batch. Just finished a 3 boule stracciatella with the coulis on top. Marvelous!! I have some leftover (two bottles and a jar), for how long can I put them in the freezer? 17 years?

Hello Chef, Questions: Could I freeze the coulis? Because ideally, I would like to have it ready for when I make a chocolate desert or if I am serving something with vanilla ice cream and thought this would be nice on it. Also, what do you think about replacing the sugar with honey? Thank you
