Cream Cheese Icing
4 oz (113g) butter, softened but still cool (around 65F/18C)
8 oz (227g) cream cheese, cold
4 c (454g) powdered sugar, sifted
1/2 tsp (3g) fine salt
lemon juice or vanilla extract (optional)
1. Remove the cream cheese from the fridge and cut into small cubes. Let sit out briefly while preparing the rest of the ingredients.
2. Mix the butter on medium speed until smooth.
3. Add half of the powdered sugar and mix until combined.
4. Add the second half of the powdered sugar and the salt and mix until the texture of streusel.
5. With the mixer running, add cubes of cream cheese one at a time.
6. Mix until the icing is smooth and there are no visible clumps of butter or cream cheese.
7. Finish by adding lemon juice or vanilla extract. Add just a little at a time, monitoring the texture of the icing after each addition.
