Love how easy and simple you make the recipe. lots of people don't have much time these days but still want a special homemade treat for a holiday meal. Also the upbeat presentation and video work makes for a great package. Will check out other videos you have up as well. I made this for for Christmas, so here's my take: I followed the recipe closely but not fully, I put 3 eggs, no heavy cream, I used 250gr of natural iogurt (bc we don't have sour cream/buttermilk here), 1 tablespoons of flour and abt 1 full teaspoon of cocoa powder mixed in the hot coffee + Compound chocolate, instead of coverture. I loved how it turned out, very creamy and rich, my creamcheese was more tangy than usual and it gave a nice flavor Very good cheesecake! I totally recommend, the whole family loved it.

My nephew requested a mocha cheesecake for his birthday so I found this video and prepared this cheesecake yesterday. The flavour was incredible, however there were some issues. First of all, I used a 9" spring pan as indicated but there was so much cream cheese filling that it barely fit in the pan. Then I cooked the cake as directed at 180 C (356 F) for 45 minutes. The cake was still jiggly in the middle, as the video said it would be, but when I tested the inside with a toothpick, it was still completely wet. So I continued to cook it for about another 25 minutes but it was still wet in the middle. Then we thought that maybe if we put it in the fridge it would firm up more. Anyhow, when we finally served the cake, from the edges in, for about 2 inches was beautifully cooked, but the centre was like pudding. Nonetheless, we all loved it. However, I'm going to keep trying with this recipe to see if I can make it work. Maybe a bigger spring pan is the answer.

Hmm... it seems to me that your pan was too small. I use a 9 inch springform tin, any smaller and indeed you'd need to increase the baking time... hope this helps!

Hi from JAMAICA. What can I use to substitute the sour cream and what type of chocolate did u use? Can I use the German Baker's Chocolate or is it too bitter? Also, should te chocolate be sweet or semi sweet?

So I just put this in the oven!! I did use a flower muffin tin that was silicone but followed the recipe exactly well the batter tastes really good I will update when they come out of the oven fingers crossed this is for my mother-in-law for Mother's Day!!! Heavy cream would be good! You could also try quark or Greek yogurt (but keep in mind that Yogurt has a very distinct flavor so it may affect the taste of the cheesecake).
