Hi Pailin, just made this cake few hours ago which turned out to be soooooo indulgent, especially the toffee topping. AMAZING! I substituted the butter cake layer with mocha chiffon cake and replaced the cashew topping with pecan. Chiffon cake base made it so light whilst the topping made it so rich. I love my own twist on your fabulous recipe and I will definitely make it again! Huge thanks to your contribution!

After having this bookmarked for over 2 years, I finally made it!! I took Pai's advice and used pecans and YUMMM it's so delicious it's dangerous. You will want to eat this whole cake, i swear. While there are multiple steps in the recipe, I found it super easy and simple to follow. The only hard part is waiting at the end for it to cool! Also, she's so right! It DOES get better with time. I had a silce while it was still a bit warm , then another a couple of hours later and omggg the flavour is so much better and the cake part gets even more moist! Everyone who tried it loved it. my mom had it with a side of ice cream! Would make again.

I made the cake in a glass pan before I realized I'm stupid and I can't put that under the broiler. Thankfully, I remembered before I did that part, so I put the cake on a baking sheet and broiled it that way with the topping running down the sides and pooling all over the baking sheet. Worth it.
I made this last weekend and it turned out great... minus the terrible oven. I think next time I'm going to try a lower oven setting instead of broiling the cashew topping because it would burn way too quickly. Two tiny things I did differently (for lack of equipment): I used a 9"x13"x2" cake pan instead of a sheet pan and instead of using parchment paper, I buttered and floured the pan. Still came out super easily. Thanks, Pai!

i had a friend who did something similar to this but instead of baking topping,she placed to cool and it became like peanut brittle then she added some kind of fluffy icing on it then the same nut topping,on the top of the icing

the only other way you could do it is with one of those big conventional toaster ovens or with a kitchen blow torch. you need the broiler to brown the top and set the sugar to the right temp to toffee-ize it. but if the heat source in your oven comes from the top of the oven you could prolly do it without a broiler.

+Eileen Tang That's weird, the electric stoves I've ever used had the broiler in the top of the oven. The gas stoves have the drawer in the bottom that is the broiler, because it slides in under the gas burner in the oven. What kind of stove do you have? If you don't have a broiler, it should still brown if you place the rack at the highest point in the oven to put the pan on for browning.

Oooooooooooooooh, so that is what that drawer is for? Really? I think everyone puts their racks in there and their baking pans LOL I do. That's interesting. Too bad that drawer is filthy and rusted now, I would never put my food there.

dinaatjuh Why not clean it? I've moved into a few apartments that had some nasty looking stoves and would make them look new again after cleaning it. Dow bathroom cleaner works really well. I have a drawer in the bottom of my electric range where I store baking pans and it's clean. Why? Because when I clean my stove, I CLEAN the entire stove! Including under the drip pans. Fortunately this one I can raise the top of the range for easy cleaning under the top. I wash the drip pans every time I use the stove, when I wash the dishes.

Pailin says she's guessing here as she's never done it - but maybe you can bake it for like 10-15 mins to dry it off? Might work. But it’ll not brown of course. (BTW it's called a "broiler" function, rather than a "boiler" function ... so your oven has no element on the roof off the oven?) Good luck!

Hello! I am trying this recipe out! I did run into one thing that I need clarification on, and that is the Topping part =) yummm. It is when you bring it up to a boil after adding the dry ingredients to the milk and butter, etc.. Do you keep it on low heat? like on setting 1? This seems to take forever! I bumped it up to about 3, but for next time???
