I understand about the fridge smelling like forever-lingering kimchi smell...😭😭😭 I would get a good quality air-tight container and store your kimchi in there. It really helps with minimizing the smell of Kimchi BUT if it is GOOD kimchi, the smell is NOT BAD or RANCID ODOR. Many people make the mistake of storing the kimchi in a regular jar (non-air tight container) so it really "perfumes" the fridge. Also, you can buy a store-bought kimchi and ferment the pork belly, if you are not ready to make kimchi yet👍 (Just make sure to store the pork belly buried in Kimchi right away in the fridge.) Sometimes, when I'm in a pinch, I buy store bought kimchi, too. Not sure if you have seen my Store-Bought Kimchi Tips video, but these tips help in enhancing the taste of store-bought kimchi. Growing up in NY, I was exposed to the Korean community and my family has been in the restaurant business for many years. So I grew up being exposed to Korean cooking and I generally gravitate towards ALL YUMMY foods😋🤪🤤 Always curious about how the yummy food I’m eating is made🥰

This is the best! I just finished you kimchi recipe. My 4.5 year old helped and we had such a good time! Thank you for the authenticity. There are so many conflicting videos out there about how to treat the kimchi. You had me when you mentioned the “Kimchi Gods.” Of course, I absolutely had to click on this recipe since you mention it in your kimchi video! This was so excellent and entertaining. My daughter thinks kimchi is NEVER too tangy. I made a small batch of kimchi a couple weeks ago and held back a quart for stew. Thanks for the videos! You've helped me hone my Korean cooking skills quite a bit. I don't have any bone broth, so I'll have to use beef cube stock.

Modern Pepper Thank you so much being so kind and helpful. Don't think I'll be able to get all the ingredients since I live in way out in the sticks in Scotland, could maybe buy most of the dried ingredients online, but I doubt if I could get the right kind of cabbage and the big radishes anywhere, even in the nearest city. It's difficult to go anywhere far away at the moment anyway because of all the "covid" restrictions getting more severe again, we're not even supposed to even visit our own family members in their homes again. It's going backwards very quickly. I know it wouldn't be the same but I wonder if I could substitute another kind of cabbage and another veg for the big radish. The only radishes we can buy here are the very small red ones. I'll definitely try it sometime when I get the chance and I'll be watching more of your videos in the meantime, somebody in the comments section was asking you for more seafood recipes, I'd be interested in them too because my partner and me love seafood and we can get lovely fresh seafood where we live because it's right by the sea, scallops are my favourite. I love trying new recipes and styles of cooking from all over the world, haven't tried any Korean food yet though. One of my American online friends told me about Kimchi, she makes her own, and she said it's very good for your digestive system, I have lactose intolerance so she thought eating Kimchi might help me, it does look so delicious and I love hot spicy food best of all. I made this using the beef bone broth from your other recipe and oh my gosh it is so yummy and thick!!!! I did over did the soybean paste, I had to dilute it with more beef bone broth. Still SO GOOD

This was a delicious recipe. I’ve made it twice since discovering the video. The butter complemented the broth well even though I initially was surprised by its inclusion. Its good! Question though…In every kimchi stew recipe I’ve watched, it seems as though there is so much excess kimchi juice they’re able to use. I buy the store bought ones and I barely get half a cup from it. Is there a way I can get more kimchi juice out of the jars I buy?

I'm not Korean but I've noticed the kimchi juice increases over time in the fridge. The key to this stew is to use well fermented kimchi (ie not fresh) for enhanced flavor and more juice :)

@@ModernPepper Funny story: My mom is diabetic. Few years ago, her blood sugar spiked real high for 2 weeks and I couldn't figure out why. Nothing had changed in her diet or medications.. We went to the doctor (whom we adore) and she checked my mom for everything. But the tests came back fine. Then the doctor says "Stress can also increase blood sugar. Have you been under stress?" My mom answers "Well yes..." I ask her what she's stressed about. I watched this sheepish look come across her face, then I KNEW!!! I say out loudly "Please don't tell me it's because of the damn shows!!!" Mom bursts out "It's not my fault!!! They are soooo good yet so infuriating!!! They make me so upset!!!" By now I'm now shouting "You got yourself so stressed over some damn show that your BS shot up?!!" During the entire "passionate conversation" that followed, the doctor was laughing so hard that she was doubled over. Needless to say my mom stopped watching the dramas. #facepalm

Hi ppp ppplll Thank you🙏. Excellent question! When you ferment the pork belly in kimchi, it tenderizes the meat, and also removes the gaminess. You can also ferment the pork belly in fermented kimchi juice for 48 hours, in the fridge, before adding it to the kimchi jjigae. If you don’t feel comfortable, then don’t follow the pork fermentation recipe. You can just add the pork belly to the stew and see if you like it that way. FYI - As noted in the video, I add extra salt to the pork belly and I recommend thoroughly cooking the fermented pork belly and the kimchi that fermented with the pork belly

i did my starter broth with radish, kombu, and dried squid... I had no access to anchovies... but my kimchi is home made... even tiny salted shrimp... I hope its ok... the broth with squid is good... I added a dash of 3 crab fish sauce

Some are made with seafood broth, and some r made with beef or pork broth, depending on the protein/meat of choice. What matters the most is that u like the taste of ur kimchi stew, the way u make it😋 Not sure if ur in the US, but u can order dried anchovies online.
