Welcome to my channel. I am excited to share this delicious Yogurt and Apricot Cake recipe with you today.Combining the goodness of creamy yogurt and the sweetness of ripe apricots, this cake is a true masterpiece that you wouldn't want to miss.

Ingredients:
Cake Batter:
1 cup (125g) all-purpose flour
1/2 teaspoon (2g) baking powder
3 tablespoons (40g) sugar
1/4 cup or 4 tablespoons (50g) softened butter
1 egg
Cream:
4 tablespoons (50g) sugar
1 tablespoon (10g) cornstarch
3/4 cup (170g) creamy white yogurt
1 egg
1/2 teaspoon of vanilla extract
2/3 cup (100g) fresh and juicy apricots, diced
Icing sugar for dusting.
- In a mixing bowl, combine 125 grams of all-purpose flour and 2 grams of baking powder. Add 40 grams of sugar and 50 grams of softened butter. Mix the ingredients together until you achieve a crumbly texture.
- Crack in one egg and continue mixing until the batter becomes smooth and well combined.
- Grease a round cake tin or line it with parchment paper, then spread the dough evenly in the prepared cake tin. (Cake pan size: 18 cm)
- Refrigerate the batter for 15 minutes, allowing the flavors to meld and the batter to firm up slightly.
- Meanwhile, preheat your oven to 180°C (350°F) to ensure it's ready for baking.
- Now, let's prepare the luscious apricot filling. In a separate bowl, combine 50 grams of sugar and 10 grams of cornstarch. Stir well to ensure even distribution.
- Add 170 grams of creamy white yogurt, another egg, and 1/2 teaspoon of vanilla extract to the sugar-cornstarch mixture. Gently stir until you have a smooth, creamy filling.
- Take the cake batter mold out of the refrigerator and evenly scatter the diced apricots over the batter.
- Pour the yogurt mixture on top of the cake batter in the tin, making sure to spread it evenly to cover the entire surface.
- Place the cake tin in the preheated oven and bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
- Once the cake is baked to perfection, remove it from the oven and allow it to cool in the tin for a few minutes.
- Transfer the cake to a wire rack and let it cool completely before dusting the top with a generous amount of icing sugar.
