His explanation on the benefits of greens was awesome, clear, and very understandable. I've never heard what he said before and should be taught in our local public schools. My family and I really need to eat more plants. I've incorporated more greens and vegetables in general but it is not easy since we've been eating junk for years. Now my husband is recovering from stroke and I'm over weight and one out of 4 of my children struggle with autism. Pray for us that we can make this transition and get healthy and stay healthy.

@@wrongworld I wish I could say I have been eating the amount of greens like they say to, but I haven’t. I did give up meat and dairy for a while, but my calcium and bun/creatinine went low. So I added back in low fat dairy and lean meats and that did help. My diet has gotten worse, eating out to much and sweets. I haven’t been taken care of myself at all. I do for everyone else and then Im exhausted to take care of myself. Im just in a rut right now, but I truly feel God is with me and Im going to get myself together. Just you asking me this question I feel was a blessing. I know I have to keep trying to take care of myself. I know for me I can’t go full vegan, but I can add more of the greens into my diet. I pray you stay well. Good luck ❤️

regarding organic, i was told by a produce manager at a market that sells all organic only veggies and fruit that the only difference between organic and non organic is the amount of spray that is used. He said both are treated with some kind of spray. Typically the organic are treated once with a LOT of spray vs the non organic which is treated multiple times throughout the growing season. He asked me..when is the last time you saw a wormy apple in a grocery store, whether it was organic or not organic..it's been a long long time. He said, that is because both are treated

for storing the greens.... put all greens/veggies in sink with water to wash/rinse. Then the trick to make them last nice and PERKY for a week or so ( if they are not eaten first by then ) is in a tray or storage drawer, place them all in (i usually have tow or three on the go) is to PLACE A WET cotton clean dishtowel on top!!!! and throughout the week re-wet it. You will be amazed and how quick and time and money saving this is and much less waste.

Place them on a tray or in a storage drawer, then place a clean wet cotton dish towel on top. Throughout the week, re-wet the dish towel.

An old gardener advised me years ago to “treat cut greens like cut flowers”. So I keep mine in a vase on the kitchen windowsill. If the end of the stalk has already dried up and died, I’ll trim it off before putting it in the vase. Then when I start cooking I pick leaves out of the vase as I need them.

I wish I could, but they don't sell them in bunches where I live. There are all sorts of cabbages and lettuces that you can buy whole and sometimes andivi, kale comes pre-shredded in plastic bags (as a kid I had no idea what the plant looked like, only knew the bags and the flavour of the leaves) and most other greens they do not sell at all! I cannot get chard, collard greens, mustard greens or beet greens. I feel like we have so little variety in green leaves in the Netherlands, it makes me a bit sad...

@@firstclassstupid97 They're not so hard to grow, even in a pot in the kitchen. Arugula, especially, is a cut-and-come again veg. Once your seedlings reach a couple of inches, cut off half to eat and allow the rest to regrow.

I buy bags of flash frozen Brussels sprouts, broccoli and cauliflower put them in a glass bowl with a little water in a reservoir in the middle of the bowl. I then cover that and microwave for a few minutes. I bought some balsamic vinegar to dip them in.

I cut brussels sprouts in half, put them on a tray, single layer, bake for 30 minutes at 350. They blacken a little. Then I just dip them in mustard. I can barely get them to the table they're so good.

I like to roast halved Brussels sprouts (frozen, slightly thawed to cut) with chopped butternut squash and chopped Pink Lady or other apples. There is enough sweetness in this mixture you don't need syrup or any other seasoning. I roast them at 425F on parchment for about 45 minutes.

I can hear the crunch. I get real confused on who’s the daughter and mother of who. So this is Dr. Esselstyn’s daughter and mother? Really confusing because NO ONE looks their age in these videos. It’s bizarre. I mean, everyone I see when I’m out and about is dying. I’m watching the beginnings of a mass-extinction take place everywhere I go. I saw a five year old boy yesterday who weighs 160lbs. Like, “Come oooooooooon! We’re taking this TOO FAR!” Then I pop on KZbin to help brainwash my young family, little newborn in tow, with your videos and it’s like, “Wait, she’s his what? He’s her … huh?” I really appreciate you folks spending your time laying down the accurate information. Not halfway - the WHOLE THING. You don’t leave any information on the table. Jane, to one of those questions about cooking greens, I would like to suggest use an instant pot if you own one! Then you don’t have to throw away any water since your greens are steaming rather than boiling! Highly recommend getting one if you can for quickly cooking beans and lentils!

Greens tip: FOR CILANTRO: remove from package and put into jar/container with the stems in water, keep refrigerated. This GREATLY extends the "fridge life" of cilantro. I sorted this out myself in the last year--yes, like they show the kale, etc. here. ON BOILING---DRINK THE WATER!!! it's so tasty! Pot Liquor! (greens tea)

So great to hear the actual science behind the 'eat more greens' message. I do not have heart disease, but it does occur in my family history, so I am now whole-food-plant-based, low SOS for prevention. My weight has normalized and I have much more energy than I did in the past, PLUS, I can eat as much as I want (and I love food) without gaining weight. My favorite cure for a headache. Boil about about a quart of quart of water, add a large bag of spinach. Cook until the water turns bright green. Save the spinach to eat later. Drink the “spinach broth “ while warm. You can add a pinch of pink salt. Headache will usually disappear within about 20 minutes. This was taught to me by my grandmother who said “any dark greens would do”.

Brussels Sprouts are my favorite next to Tuscany Kale, I purchase a large bag or at least 2 lbs. of organic Brussels sprouts each week, and wash them in a big stainless bowl of reverse/osmosis water, then I toss off all the dead or lose leaves and compost that. I cut in halves each sprout, spray organic olive oil on them sprinkle with cumin, or curry powder, then bake face down at 350 degrees for 15 minutes, with sauteed onions, and minced Tuscany kale, use vegan mayo, Veganaise with lemon juice and eat them for a meal 1 Then sometimes, I shredded the Brussels Sprouts, with other organic veggies such as REd, or Green Cabbage, with raw red onions, shredded carrots, torn arugula, radicchio, kale, pumpkin seeds, and dried cranberries, or dried cherries both organic and soy-free Veganaise as a meal too!! I like varieties of veggies blended together, and eaten daily !!

Halve the sprouts then cook them in an air fryer. It softens the sprouts while crisping the outer leaves to bring out the flavor. Tossed with sesame dressing and you have a meal!

I’ve had brussel sprouts before that I’ve loved and I’ve had them where they had too intense flavor that I didn’t like. I’ll try the maple syrup and or balsamic in the oven. Please do more of these videos on different greens. A spotlight on different ones and how to cook them. Just like you did in this video😀

We steam and roast Brussels sprouts. And we grate them and drizzle with some Balsamic vinegar for a raw slaw. Or roast with some small red potatoes the same size with fresh rosemary. We grow green and purple ones.

This is an excellent idea, I steam my lunch time veggies, always, kale, red or napa cabbage, collard greens, brussel sprouts, broccoli or cauliflower, and a choice of 2 other veggies and some mushrooms. When I have steamed the veggies the water in the bottom of the pay is a beautiful emerald green and I always dump it out, I will save it tomorrow and use it in some veggie soup.

I'm a collard fan. With mushrooms, they make an excellent filling for tacos. And they also go very very well on pinto beans with salsa. But they don't seem to be part of traditional Mexican cuisine.

It's an important point about using a mandoline. For newcomers... all you need to eat this way is a knife and a cutting board... and a pan, of course. Mainly, I'm saying thanks for showing how simple this plan is. I love the idea of drinking the cooking water instead of tea. Yum. I pretty much make one dish meals, so everything gets incorporated into the meal. I seldom 'boil' greens in water that needs to be thrown away, or used in some other way. Interesting. I hadn't even thought about that as an issue. Making one dish meals, is a great way to increase intake of all those greens and other wonderful vegis, that we (especially those new to the whole food plan) Plus I'm too lazy to make a lot of separate dishes... lol. It's been fun to include a lot of greens that I haven't tried before. Thanks for all the tips and introducing us to some fun ways to enjoy some great greens.

Thank you so much. I cook them in a little water for 17 minutes. But they are better made in the oven. Its such a nice plant.

Cotton pillow cases work great for storing greens and mushrooms!

I purchased flour sake dish towels for this purpose. Also works great in replacing cheese cloth as they're washable.

I also use balsamic vinegar, with crushed garlic and diced red onion. Then roast! Delicious.

I cannot even express the amount of respect and admiration that I have for Dr. Esselstyn. I adore you Jane and all your videos with your mom! You just have no idea how much your specific family has impacted my life. In addition to all the wonderful intelligent plant-based physicians out there! I developed fibromyalgia in my mid 40s in my entire world was flipped upside down. I was a vegetarian and I eat a lot of cheese… As a -based vegan my world has been flipped back right side up and I have this unbelievable amount of strength, and complete recovery from a pain that fibromyalgia put on me that is unexplainable. Thank you for all that you and your family do, sincerely from the bottom of my heart. Just a simple lady out in this world grateful for your videos!!!❤️

Good morning, I always cut my brussels sprouts in half, steam them for a few minutes and then put them in a bowl toss them in maple balsamic vinegar then air fry them for 12 minutes on 400° they come out wonderful. My grandchildren will scarf them up. Have a great day! Much love 💕

i like them cooked with sweet potatoes and mushrooms, especially woodsy kind I get at asian market or shitaki, on bit of veg juice, then some hummus, maybe bit of salsa, sprinkle of black sesame
