Good project boss. Very few people even think of putting a gas engine on a 20 inch folding bike. I myself built a 26 inch motorized gravel bike but am thinking of converting my 20 inch as well. Do you think you can make a way to put the motor in the middle of the bike?

Yes, if you can devise a way to mount it. The 20-inch bike is low, but the seat and your body can be as high as the bigger wheel bikes. Therefore, there can be a space in the middle.

What's stopping the sprocket from falling out of the engine ?

it did not make it in the video, but I made a simple chain guard that also prevent the sprocket shaft from falling out.
