Fried rice with vinegar is actually pretty good. In some regional cuisines in China, people do exactly what Babish does, just a different variety of vinegar.

I'm not Chinese, but when I'm out of soy sauce at home for my rice I use vinegar instead. I usually use red wine one or balsamic like Babish I was actually surprised that I'm not the only one doing that :D

Interesting, I think balsamic is actually similar looking to Chinkiang vinegar, but a lot more mellow and sweet. We have sweet and sour short rib in Shanghainese cuisine with dark vinegar glaze, I think it would remind me of that because of pairing meat with vinegar. Other than that I would be open to try Babish's creation, but I think I'd rather eat it with pasta instead of rice too 😂

As a regular on both channels I chuckled watching this. The whole premise of What the Fridge is for Andy to take random ingredients and make something wonky. And Andy regularly says when he doesn't like something or would change the way he did something on his channel. I'm sure Uncle Roger is aware of this but for the viewers who don't watch Babish please know he is an excellent chef and can make a very authentic egg fried rice when he feels like it.

Actually, Uncle Roger, there is a Chinese fried rice that uses a pesto-like ingredient of the young leaves of the Toona Sinensis (also known as Chinese Cedar, Chinese Toon, Chinese Mahogany, Red cedar, etc), and it does turn the fried rice green. It is very popular in Malaysia and Singapore - I am surprised Uncle Roger is not familiar with it.

This is my style of fried rice. Open the fridge and freezer, see what veggies and protein are lying around and throw them in a wok with some white rice. Then finish off with a splash of soy sauce, some MSG and a little sesame oil. Works every time LOL

I’m not sure if this dish would taste good or not, but Andrew is one YT cook that actually does show if things don’t work out & shows when he f**ks up. He sometimes follows up with another video trying to rectify the dish. Also, the tattoo is a whisk, not a feather!😂 I’d love to see the two of you get together & cook!

Legit, I have no idea why Uncle Roger treated it like it was a serious and planned recipe. He just experimented and made a tasty meal with whatever he has. I feel like Uncle Roger purposefully made stuff up to seem more upset. Like come on, just because rice grows predominantly in asia doesn't mean non-asian ingredients don't fit with it.

There are actually a lot of Chinese fried rice with vinegar, but not balsamic. I've had it in multiple regions mostly near to Shanghai, JiangSu, and Zhejiang regions.

Watching Babish on WTF and evaluate his cooking skills based on that is like watching a pro football player play Fuseball and saying he sucks because he lost. I've been watching Uncle Roger for a long time, but there are some videos where people clearly say "this is not conventional egg fried rice" and he just shits on them for not doing it conventionally.

In Philippines, our fried rice is very simple. Left over rice, garlic, onion and salt&pepper only. The added eggs and etc are blessings but province sinangag is very simple. Seeing pesto on fried rice is crazy

I remember when I was younger, when eating garlic fried rice, for each spoonful of it, before I put in my mouth, I would add a drop of cane vinegar. Great by itself. Works best with eggs, fish, longganisa, tapa, tocino, etc. Simply combining vinegar + garlic + salt + pepper creates an amazing flavor. Uncooked, it’s a powerful dipping sauce. Cooked, it’s the base of the Filipino adobo! Balsamic vinegar sweetens when reduced. Regardless if it did or not in this recipe, the generous addition of salt in the end could’ve saved it towards tasting a bit like an adobo rice.

Even those from Guangzhou having Cantonese mother tongue don't speak such way. e.g. "I have" becomes "I he-wu". It's simply a matter of education system.
