Interesting, I think balsamic is actually similar looking to Chinkiang vinegar, but a lot more mellow and sweet. We have sweet and sour short rib in Shanghainese cuisine with dark vinegar glaze, I think it would remind me of that because of pairing meat with vinegar. Other than that I would be open to try Babish's creation, but I think I'd rather eat it with pasta instead of rice too 😂

@@MarceloZ2 Did Roger need to watch a lot of Kay's cooking before he commented on her burnt garlic and raw rice effort? Or does Babish get some sort of special treatment? The premise for the meal from Babish is hardly "fine dining" - it's more Ed Byrne "home from the pub pissed" cooking. Babish didn't do the dish with any respect for it, so why does he get extra respectful treatment. It's a "sh*t from the fridge" dish, not chateaubriand.

OGs of the Babish Culinary Universe know there's two sides of the coin The prim and proper Binging with Babish doing an elegant voice-over of artistically-prepped ingredients magnificently cooked to obtain culinary success in recreating a movie/TV/videogame food And the absolute agent of chaos and crazyness that is the Mad Scientist Andrew Rea while revisiting past failures, challenging the rest of the BCU in creating a whole meal out of weird stuff, or using random s**t he found in the fridge to make a dish out of it, all while being the most unhinged he can possibly be. I remember when I was younger, when eating garlic fried rice, for each spoonful of it, before I put in my mouth, I would add a drop of cane vinegar. Great by itself. Works best with eggs, fish, longganisa, tapa, tocino, etc. Simply combining vinegar + garlic + salt + pepper creates an amazing flavor. Uncooked, it’s a powerful dipping sauce. Cooked, it’s the base of the Filipino adobo! Balsamic vinegar sweetens when reduced. Regardless if it did or not in this recipe, the generous addition of salt in the end could’ve saved it towards tasting a bit like an adobo rice.
