250 g of rimacina semolina flour (divella)
250 g 00 flour with 10 g proteins
280 ml water at room temperature
5 g brewer's yeast
2 tablespoons honey
1 tablespoon extra virgin olive oil
10 g salt
30 g lard (coconut oil for the vegan version)
1 g black pepper
7 g anise or fennel seeds

Step 1
combine the two flours and rub the lard with your hands until it is incorporated with the flours

dissolve the yeast and honey in the water
Step 3
add the flour mixed with the lard
Step 4
add the spoonful of oil and leave to knead for 5 minutes at minimum speed with the spiral hook

Add salt and pepper and let knead again on speed 2 for 3 minutes

add the aniseed or fennel seeds (depending on which ones you have chosen to put, although obviously you can not put them at all) and let it add to the mixture for another 2 - 3 minutes (in all you have to knead for 10-12 minutes)

Put a drop of extra virgin olive oil on the pastry board and knead a ball with your hands for a couple of minutes and let it rise for about 2 hours, in a lightly greased bowl with lid, in the oven off with a saucepan of hot water inside

resume the dough which will have to be doubled in the meantime, and form balls of 80 grams each and arrange them on a baking sheet with parchment paper well spaced (in reality there are 10 of 80 g and one of 65 g)

let it rise for another hour - about an hour and a half covered with a cloth and with the pan of hot water inside the phono off

flatten the balls with your hands that will have doubled their volume up to a thickness of 1.5 cm

brush the surface with water and cover with semolina flour or sesame seeds according to your tastes

now you have two options or you let them rise for another half hour and then put them in a static oven preheated to 190 degrees for about 15-20 minutes until they are golden and well cooked

or you can immediately put them in the off oven and turn on the oven at 190 degrees in this way they will rise a little inside the oven while the latter reaches temperature, the cooking time can vary from 25 to 28 minutes in this case
