Chinese eggplant is my *all-time* favorite Chinese dish. When l lived in China l ate this like l was a pig. I have enjoyed this recipe. Found myself with a sudden abundance of eggplant and this helped. I roasted them to start as I do not own a wok. And I had no ginger or Thai peppers but I think it tastes pretty good. Can't wait to have more.

Made this last week. Very good recipe, low on sauce. Also, I added a chicken buillion to the sauce for more flavor. Added carrots and onion. Very simple and straight forward. Took 10 minutes to make.

New sub here. Made this for dinner today and it was a hit! The recipe is super tasty and flavorful as is. Also important is that the recipe was really easy to follow and the ingredients are all things I typically have on hand. I added about half a teaspoon of gochujang to the sauce for a little extra kick and it was delish! Can't wait to try more of your recipes!
