Everybody is complaining about people using their bare hands when making a pizza. This stuff gets baked in a hot oven for 20+ minutes. Any "bacteria" on their hands is going to get killed before it gets on anyone's plate. Great episode, I love Chicago and I love pizza.

To add to your comment there was a study done not too long ago that actually confirmed that people are much better at regularly washing and sanitizing when not using gloves. When people use gloves they get lazy and never change them and regularly cross-contaminate. With bare hands it is much easier to feel when your hands are dirty and know that you need to wash your hands.

idk how long do chicago pizzas get baked for, but normal ones get baked for 2 to 5 minutes.. I doubt they actually getb aked in 20+ minutes

@ Daniel s tavern style pies definitely get baked for 20 minutes. And deep dish for about 30. That long baking time is what makes them crunchy unlike NY or New Haven. I know because I work at a Chicago pizzeria.

Love this piece! The host is respectful, soft spoken and in touch with reality. He's not some loud mouth try hard comedian that you always find on food shows. And you really can tell it's not "script heavy" it's all heart! Thank you!

I just stumbled on this video and I have to say I didn't expect myself to sit through the whole thing. This was just very well done. I don't care about pizza enough to watch a nearly 30 minute documentary. But the music used to the editing to the host's natural charisma, I found myself intrigued by every little detail that was presented. This is just great entertainment. Thank you for your quality work.

Joe is one of my dads childhood friends. They both moved to America from Italy at 13 and lived in Cicero right down the street from each other. Every time we visit Cicero joe treats us to whatever we want and truly makes the best, home made food in the area. Freddy's is truly a staple of chicago

Even in South Korea, there are a lot of "Karen" complaining that Pizzaiolo makes pizza with their bare hands at restaurants. We call these garbage people "Momchung". (Mom=Mother, Chung=Insect=Garbage, AKA “Mum-Roach.”) Karen always complains that there is dust in the corner of the restaurant, that there is dust on the salt bottle on the table, and that the entrance is slippery on a rainy day etc. However, when they go to an expensive Nobu Japanese restaurant, they have no complaints if they eat sushi made by the Japanese "chef" with their bare hands. Karen's duality and contradictions are endless. Btw, Chicago Pizza is really good and I love it. Please make more pizza episodes with Frank. Frank, sei numero UNO.

Yes. Considerably higher. You can get a whole pizza for around 10 bucks in NYC, but a large deep dish starts at 15 for a small and gets up to 20+ for a large.

Wise Guy I am from Singapore. Over here the main eateries for pizza is either Pizza Hut or Dominos. I have tried pizzas at other small cafes here though but I have yet to try a really good and authentic pizza. This video is making me hungry :(

I’ve grown up and lived in Cicero my whole life, and to see Freddie’s getting the recognition it deserves makes me so happy. I have so many good memories walking to Freddie’s to get Italian ice and pizza almost every week. And Lou Malnati’s is truly my favorite deep dish, Giordano’s second and Paisano’s 3rd 🤤

As a New Yorker who's never been to Chicago, I'm partial to our pizza, and the deep dish we're served here doesn't cut it - as far as I know, ours is the best. That said, I'm intrigued and interested in checking out the real deep dish and the thin crust in Chicago. There's a lot of love in what they do in Chicago, and I'd love to sample it... and I've heard good things about Detroit too. I'll have to sample the midwest's best at some point, because it looks a lot different than Italian and NY pizza... and it's nice to see variety and creativity.

Just like the "New York style" pizza places that opened in Chicago didn't quite cut it. Or the Philly cheesesteaks all over the country that are not the same as in Philly. For some reason, when people take something from one city to another city, it's just never the same so you don't get the full experience.

This is a great video. I live in Chicago, and I am so sick of the deep dish idiocy. I only eat deep dish pizza when some random person is visiting. Otherwise. I eat the thin crust, square-cut pizza shown in this video (I live on the South Side). It is refreshing to see a video on the pizza that Chicago residents actually eat.

You know, people eat both kinds in Chicago, thin and thick. Giordano's is Illinois's largest pizza chain(thick crust) and Home Run Inn is Illinois's largest frozen pizza company (thin, but not NY style)

@#TEAM TRUMP Ugh just like Dolinsky said - tourists come and stay in a 6 block radius like you did. You didn't see anything yet. Just think about that for a second. You are missing so much of this amazing city (especially food) and you have no idea. Well a little - because you saw this video. I'm so lucky to have been born and raised in the Chicago area. But make no mistake - thin pizza is our real pizza. And I say this LOVING deep dish. Naruto Uzumaki lived here his whole life. What's that 20 years? He's a kid. He has no idea of what the old timers were like. Or even how to say Chicago properly like the guy at the beginning does. It's sad to see the old ways and people go. And remember - deep dish is not the same as stuffed pizza. Giordano's is overrated crap stuffed pizza.

Last year and this year my kids bought me six Giordannos pizzas which are in the freezer. I've loved Chicago Deep Dish since my days at the Moody Bible Institute in the city.

@@nadrud Except few things you probably use daily like blue jeans, everything Apple related, wd 40, and things may not use too often like lasers, vhs recorder, wetsuits, squeegees, popsicles, skateboards, and more important inventions like automatic gear shift, landing system for aircraft, radar system for locating planes, etc. You realize Silicon Valley is located in California, right?

Nope. I've had pizza throughout Italy. It's like southwestern pizza on extra sodium because of the culture of salted meat. Plus, most places seem to have never heard of pepperoni! Best pizza in the states is in Buffalo NY. It's in between Chicago and NYC so you get a medium crust. Go figure! Those folks know how to make a great pizza to compliment their wings. If anyone's in that area I recommend Picasso's for pizza and La Novas for their wings (and pizza). Pudgies is another in that area that has the right ingredients too, their sheet pizza is best. A bit on the saucy side though.

I've lived in Chicago most of my life, nobody from here that I associate with orders deep dish. Deep dish is what you get when friends from out of town visit.

Then you must live in an area that doesn't have great deep dish. I'm born and raised here my entire life and I eat deep dish often. YES - thin crust cut in squares is our main pizza and is what we get the most. On that we agree. But if I had to have one last pizza - it's going to be a Lou Malnati's deep dish with buttercrust.

I grew up in Hometown down the street from Vito & Nicks! Still my top 3 growing up. I am now in Jersey and miss my Chicago roots. Jersey has some good places but nothing beats the memories from growing up.
