Thank you Marion for your nice and relaxed video today. Easy on the heart, eye, mind and stomach. It's nearly 3pm and my prawns are frozen. Will take them out anyway. I have broccoli only. Give them a diagonal cut and chop small. That should work! Oh the noodles! I have some wet Udon noodles. That will have to do for tonight 😋

I did not know you could freeze fresh rice noodles! My Asian grocery store only gets them once or twice a week. I was too scared to try freezing them because I worried about ruining a batch. Now I know I can buy a few packages, keep a few on ice, and make Pad Kee Mao anytime I want! 😍❤️💛🇹🇭 🇦🇺

I was sick of my wok not being hot enough so I first bought a 55MJH burner which I thought was awesome!! That was until I bought a 155MJH burner that has its own stand and everything!! I'm really enjoying the discovery of so many new (to me) ingredients in your recipes. I learned about dark soy sauce from you, black vinegar, sichuan peppercorns, on and on! I even procured some palm sugar now and I'm eager to put it to use. Is palm sugar suitable to use in this dish where you use the granulated sugar? I love watching your channel! Marion I love your techniques. Anytime I make prawn dishes though, I find if the shrimps are not cooked until just opaque they get really tough. I generally stir fry until opaque and remove from the pan. But here you are stir frying them for quite some time so are you using a different prawn or that's just how the dish is made?

If you can't find fresh rice noodles, you could use dried rice noodles (just cook them before hand) :-)

"Regular" is light soy sauce or soy sauce. The dark one is the sweet one with less saltiness and a darker colour, usually marked as "dark" or "kecap manis".
