What is the optimal temperature in the refrigerator for storing prepared vegetables? Doesn't food spoil in 3-4 days if you store cooked vegetables with rice or pasta?
@lovelybylisa11 ай бұрын
Hello and welcome to my channel! 🥰 Thank you so much for your comment and question! Safe food storage to protect against bacteria has so much to do with the temperature food is stored at and the water content of the food itself. The USA FDA recommendation is below 40* F. I personally like to keep my refrigerator colder, and I have it set to 34-36* F, and I don't recommend storing meal prep for more than 4 days at that temp. Freezing prepared food gives it a lot longer life and mitigates the risk of spoiling/bacteria. This is a great question! The temperature you store the meals at affects the quality of the food. I keep my meals in a very cold fridge (36*F) so that helps. If you are worried about food safety, you can store the later meals in the freezer. Hope that helps!

Rice is actually dangerous to use after 24 hours after being cooked. Look into it, I hope you find a great substitute.
@lovelybylisa5 ай бұрын
Hi Victoria! Thanks for the comment. I believe what you are describing is related to the improper storage of cooked rice- bacillus cereus or "fried rice syndrome". The possibility of this bacteria is not only present in cooked rice, but also uncooked rice and it's severity depends on the storage conditions once cooked (and this applies to many starches, not just rice)! I have a Master's Degree in Public Health Nutrition so I understand your concern, and I also don't believe in fear mongering. From author Leong et. al., "The outcome of B. cereus illness varies dramatically depending on the pathogenic strain encounter and the host's immune system. B. cereus causes a self-limiting, diarrheal illness caused by heat-resistant enterotoxin proteins, and an emetic illness caused by the deadly toxin named cereulide. " Safe food storage to mitigate bacterial growth is multifaceted ~ the length of time the food sits out to cool after cooking, the storage temperature of the food and the water content of the food itself. Freezing prepared food gives it a longer life and mitigates the risk of spoiling/bacteria. The USDA had a giant chart on their website and the general recommendation is below 40° F for refrigerated foods. I like to keep my refrigerator colder, and I have it set to 34-36° F, and I don't recommend refrigerating meal prep for more than 3-4 days at that temp, after that I recommend freezing! Hi! Thank you for your comment. In my experience, once people start cooking this way, they can make it feel less repetitive. Maybe they cook 6 different types of meals for the week and freeze some extras?! For me, I don’t mind the same day to day because I’m changing it up drastically week to week, (so I wouldn’t make anything with similar flavors for a few weeks after this). That helps a lot for me! 🥰

Depending on your refrigeration setup, these last all week (7days). I keep my refrigerator at 36* F so they are a bit colder. You could also put half of them into the freezer and heat them up as you go through the week 👍

In English I can add more context, lo siento! Hi Samira, thanks for sharing your opinion. The temperature at which the rice is stored will determine the amount of “mold”. If it’s stored at a cold temperature, it’s ok.
