What a great way to honor your mother by cooking her dishes and dessert’s. I honor my mama that has passed by cooking her foods she always cooked for us. I call it keeping mama in the kitchen with me. That coke looks delicious.

My grandmother use to make this cake. I've been trying to remember how she made the filling. I remembered that she cooked the filling but I didn't remember. My grandmother made seven minute icing for that cake. I'm not going to try that because it involves a double boiler situation. Thanks for making this cake. Today, I ran across your KZbin video after I made a pineapple cake. I used a recipe that I got from the grandmother of an old friend over 45 years ago. I was pleased with the outcome; however, the next time I make the cake I will cook down the pineapples like you did and I will add crisco to the cake batter. Thanks for sharing. Your mother’s cake pans were definitely worth the money she paid for them. I can’t believe that she used them when you were a child. They look almost like new.❤❤❤ By the way, I became a subscriber today.

Omg what a beautiful cake and such a lovely way to honor your mother’s memory. You mentioned jelly cake. My mother in law said to me the best cake she’d ever had was a jelly cake. I didn’t know what that was. Can you share a recipe for that. My mother in law has passed away but what a great way to remember what a wonderful cook she was. She was from Louisiana.

Looks good and on top of that it's one of my favorite classic cake of all times. Either if it's just the straight up crushed glazed pineapple on it with or without the cream cheese icing. My 107 year old grandma still makes this classic cake today. Thank you for sharing this.

Hello Carrie, if I didn't know any better, I'd say we grew up in the same house. My mother made the best cakes without a mixers. She would beat the batter by hand. We also grew up with the sample. We couldn't wait to get a warm slice of it. Like you I have my mother's stand mixer, cake pans, roaster, and other utensils. I'm in my 70's and they are still being used. I'm the family cook now. I enjoy your channel. Thank you for sharing.

Great cake. Just a thought before filling. Pipe a dam with frosting before adding pineapple to keep filling from oozing into the frosting. Enjoy your cake.

We know the recipes quite well, but our minds goes blink as if we forgot how to make it without trial and errors. My mom and her mom bake the cake layers almost identical to your recipe. The icing different. Pineapple cooked down. Take egg whites beat stiff and then add powder sugar. Then mixed the cooked pineapple and egg white mixture and then iced the cake. I have an aunt that continues the same. Also, coconut would be done in the same manner. Please call so I can have a piece.
