Cant wait to try. I use 1/3 cup chia seeds and add 1/2 cup boiling water, stir and let sit for 5 mins. Then add other ingredients and the pudding is ready in 1 hour.

Hi!! Just dropping by to say thank you so much for this recipe! I made a week's worth of meal prep (trusting you fully) and this is easily one of the tastiest high protein meals I have ever made! Sooooo good! Instead of mangoes my topping is caramelized diced apples (basically just boiled down apples with water & cinnamon, no sugar!)

Hi, how many carbs does this have? I have been on keto for about 5 months now, found out I am diabetic at 52 years old ☹I have lost about 30 pounds, went from a size 14 to a size 9, and still trying to fit into my size 7 from 3 years ago LOL. So I dont know if I can eat mango on keto, I only eat berries , which I can substitute, but for the way you made it , if you could tell me the carbs, also is your book low carb recipes ?
