I’d like to share my perfect settings for the effeuno P134H factory stone and the dough that we all like here the most with this stone.

So guys this dough is hand-made of caputo pizzeria with a
63% hydration rate.
7 dough balls 255 g each
1075g Caputo Pizzeria (if you're located in Austria you'll best get it at Metro Market for a very good price!) shop.metro.at/shop/1/1724594?...
677g cold water
1g fresh yeast (or .5g dry yeast)
33g salt
It is prepared and kneaded by hand for a 24 hour room fermentation - so no (spiral)mixer. So it has a very low amount of yeast. I kneaded it for about 10 minutes after the ingredients were combined. I gave it a 1 hour rest and then put it into the fridge for 3 days at 3°C so the fermentation was very little or even stoped. I put it out then for 12 hours at rom temperature and formed the balls after that. these balls rested again in the box for about 4 hours.
I use semolina and flour to stretch the dough. this gives the crust an even more rustic and crunchy taste.
The effeuno has the factory stone in it and is set to 350°C or 700°F on top and 320°C or 640°F on the bottom heat element. This makes a cooking time of about 2 and a half minutes. I rotate the pie once after about 1 and a half minutes.

You are biggest pizza fan i know 👏😉 From your movies it seems that it makes no really sense to pay extra for 500 Deg version and biscotto stone? Correct? Seems that OEM version is good enough! Keep on baking! 😎

Yeah this 500°C version is ONLY for the ultra neapolitan style - we actually like it a little crunchy and rustic here and to be honest I hardly use the saputo stone in the effe because this pizza at these settings with this dough is just mindblowing :)

It may be tricky with the fuse and voltage... :( This oven is just awesome for indoor - Can't quite get the valo in the kitchen :)
