l am boring also lol. every morning l have oats and fruit and date paste. lunch is always a salad with rice beans veggies carrot lettuce silver beet and a sliced apple or orange and l make a dressing with tomato sauce vinegar lemon juice and water . dinner l mix up a bit stir fry stew or soup. l also weigh myself each morning for data to see if l need to eat more or less. l am not on any meds . l am 67yrs and l exercise daily at home with dumbbells and l do pull ups and push ups. thanks for the video. it's good to see how healthy people eat. the thing is l never get bored with eating the same thing each day.

Another way to reduce a glycaemic index of cooked rice or any cooked grain is to cook it, and then put it in the fridge overnight. It changes the structure of the starch to make it more of a resistance starch.

As long as fat intake is low 10% or so , glucose ,sugar, etc.is no problem, gives you tons of energy.Overly fat in diets cause sugar spikes, because insulin receptors in cells get sticky with lipid overload, thus dumping sugar into blood, instead of the cells where the glucose is needed, and no sugar spikes. The cells love glucose, too much fat , not so much.

@@brettbudward Not really. I’m not dumping huge amounts of sauce and I use Bensons Tasty salt replacement which any in the video. But I experiment with different options and my wife has started making some good ones. I’ll probably get into that more in a future video. Thanks,

I put 1/2 cup[ garbonzos atnd 2 cups water into a pressure cooker on high heat for 10 min once lid is tumbling, then cool for 15 minutes but into 2 small mason jars and freeze- lasts me for 1-2 weeks

Really good to see what you eat. Quick videos are perfect too. I'm UK so not every product is available here. I miss rice though 😢 but Dr. Greger's arsenic warning means we've tried other whole grains which is a good thing. I'll always eat beans and tofu with my veggies (every meal) otherwise I'll get too hungry and that's when the junk food gets me. Kale smoothy gets my greens in. All the spices, amla powder etc that Greger recommends I blend with 6 dried prunes, ground flax & chia, nuts, seeds, goji and sprinkle over cooked amaranth, quinoa, dried figs & apricots. Since Greger 2016 I eat more beans and fruit plus all the other good foods and I'm loving life, health, marriage, exercise, mood. I became vegan 2013 not knowing that it would actually turn out to be good for me and my husband. Watching Earthlings 2011 started our journey. It took longer to become vegan only because we didn't know what we were doing and had no help or reference. Just experimenting with food and dealing with people's feelings 🙃 that was the hardest part.

Something that really tastes so refreshing and healthful as part of breakfast is Supergreens (baby kale, chard, and spinach leaves). I buy several one pound packages and repackage in freezer bags and use frozen. I just put an amount in a bowl, add a tablespoon of filtered water and steam in the microwave for four minutes. No seasoning or salt, just the leaves and some water. The taste is superior. I've found that many vegs can be frozen and combined for cooking. Or look for other varieties so you don't get bored. I freeze cut up celery, small tomatoes, zucchini, summer squash. The pieces separate easily and it only takes a few minutes to cut up. Also put some zucchini slices below your frozen veg in the pan for the liquid instead of water...yum!

Is that a Teflon wok that you cook food on high temperature with? If so, that is not good for you, right? Do those cans have plastic film liners? You might want to switch to homemade cooked beans (taste better too) or better yet, sprouted legumes.

So for anyone who thinks they don’t get enough protein on a vegan diet, jogging 6 miles a day complimented with calisthenics ought to put those concerns to rest. I too find that a simplified diet works really well. Soups with everything in the pool is how I roll. I usually load them with beans but maybe adding a grain would be a good idea. Your recipes are certainly “food for thought”!

Thank you for sharing your blood pressure info and results. another biomarker: Based on my research (and personal experience wearing a CGM), when I eat more than about 20 carb grams at a time, my Blood Glucose (BG) spikes, triggers an insulin release, crashes, then oscillates to return to preprandial levels. Frequent ‘spike and crash’ cycles apparently have been shown over time to damage vessel walls and have other negative health impacts. Do you have any information and/or studies about BG range (also called variation and/or variability) among the plant-based community? Thank you

Hey, same here, I simplified mine too. Looking at yours, though, I'd add either green, or yellow peas, or lentils, your choice, or all, to the first two meals for some added protein, since the body does not store it, and some black "forbidden" rice which has lots of polyphenols as found in blueberries. For exercise I use stair-climbing outdoors. Dr. Fuhrman says stair-climbing is the best exercise, and he is a former athlete, so I think he's got a right to an opinion there. :) Well, I love your videos on nuts and other things that needed clarification. I'm sort of surprised when someone goes into fats as healthy or bad without mention the work of Dr. Robert Vogel of U of Md. His studies of blood flow and arterial dilation show the story so clearly, yet nobody mentions it. Olive oil, for instance caused dilation to cease for about 5-6 hours, same as a Big Mac. Bothe the BM and olive oil have 14% saturated fat and both do exactly the same thing to the arteries. I have not seen this around. He also found that canola oil did NOT do this, and it has only 7% saturated fat. !! The importance of arterial dilation is based on nitric oxide. Saturated fat tends to coat the endothelial cells to where they can't sense the shear stress of blood flow, so they can't trigger production of nitric oxide. This raises blood pressure, and also forces cholesterol into the cellular walls and raises plaque! This is why Esselstyn says "no oil".

@ I haven’t tracked calories much, but I enjoy dates, eat bread sometimes, I eat pretty large quantities so I’m getting my calories thanks! But you can eat more calorie dense food like dried fruits, I in deans even McDougall was eating nuts at one point when he was looking to increase calories.

Some volatile chemicals, like certain pesticides or volatile organic compounds (VOCs), have a lower boiling point than water. This means they may vaporize along with the water and could be carried into the distilled water, concentrating rather than being removed. However, this depends on the specific chemicals present. Distillers are sometimes paired with activated carbon filters to help remove such VOCs and pesticides after the distillation process. PFOA and other per- and polyfluoroalkyl substances (PFAS) are relatively stable chemicals, which means they don't break down easily and can persist in the environment. While distillation can remove some PFAS, it’s not guaranteed to remove them all, especially shorter-chain PFAS that are more volatile and may be carried over in steam. Activated carbon filters may also be needed.

Great Job taking your health seriously I never could get the vegan thing to work for me i feel the best eating mostly animal products and most my vegetable intake are fermented and really used for condiments. This keeps all my biomarkers great and keeps blood sugar low guess that's proof there is no right way to eat since we are all different but lots of carbs always have a negative impact on my health and makes me hungry all the time.

I run half-marathons, think my last one was 1:47. My VO2 Max is 48, though I can get it to 49, but hard to keep it there! Been running a couple years, my son got me back into it, he's a big marathon runner, can run 5 marathons a week (and has done so!). I run around 35 to 40 miles a week, 6 miles a day or so. Also do sprints couple times a week or some kind of high intensity workout.

Romaine lettuce is nutrient dense. But even iceberg lettuce, is nutrient rich. on a per calorie comparison, iceberg has as much of many nutrients as does romaine. Iceberg has more Vit C and E and exceeds RDA for Vit A, Folate, Vit C, Vit K and has almost 1/4 of recommended intake of omega 3. I like prefer the taste of Romaine, but iceberg isn't junk food. Remember, we are not in a race to see who can get the most nutrients. The overfocusing on nutrients is done by companies or "experts" trying to sell you something, not health though. Yes, my wife uses spices in the beans and I use them from time to time, often use Benson's tasty salt replacement. my BP was high probably because my diet had slipped. I run the same amount as you plus walking and other things. Do you ever have knee problems or worry about getting them? I'm in my 50's, but am around older folks who mostly all have joint issues and it worries me at times.

I have friends who say they can't run due to knee problems. Some of them injured their knee(s) and they never totally recovered. Other ones, when they lose 12 or 15 pounds, suddenly they find they can run all they want. So the problem wasn't their knees but their weight. So far have been lucky. Love running.

Hey Jeff... I liked the unique par boiled rice you're using here, so I have a bag of the exact same one arriving from Amazon today... if I could trouble you or you wife for how you batch cook it in the instant pot (I have one of course). Normally I would just look up how to cook any particular item in the instant pot.... I do know how to cook rice in mine, but since it's par boiled I assume it will cook quicker, and not be so easy to find tips for the instant pot. Water to rice amount and time? Gratitude for your help with this if you have time. Thanks Jeff! 🤓

@@cantstoplion We rarely cook rice in the instant pot anymore. Sometimes brown rice but generally, we use the microwave now. We have a set of bowls from the pampered chef, chef AJ is the one who put me onto them, and you simply put the rice in that, pour water in it so that it’s an inch or so above that, and then put it in your microwave with the top on it for 18 minutes. Can I ask how tall you are? I went vegan for 6 months. I’m 5’ 10” and weigh 159 lbs. I know this sounds funny but weighing this low amount freaks me out. 5 years ago I started watching what I ate but was 180. Now I’ve lost 21 pounds. I weighed 163 forever but the last 3 months it’s now down to 159. I’m eating 2400 calories a day on a vegan diet and can’t gain any weight now. I start eating at 7 am and finish at 430 pm. I feel like I’m eating all day. It’s hard to consume 2400 calories on a vegan diet. I eat a lot of fruit, beans and nuts but feel so guilty because the last 3 days started drinking kefir to gain weight but that’s not working. I only run a mile a day outside. So it’s not extreme. Do you just eat those two meals a day and how many calories do you think it is?

@@chriscarpunky I’m six feet. Haven’t counted calories but certainly over 2000 and maybe a fair amount more some days. Pretty much two meals a day, sometimes I eat breakfast. Guess you just need more calories, which it sounds like you’re doing. All your lipid numbers good?

Yes and even reversed my sleep apnea after 5 years as I was just retested. I guess then me being 159 and you at 159 and I’m 2 inches shorter than you I’m not really that underweight. LOL. I’ve just never been this low except 30 years ago when I was married and was 148.

Do you ever eat tofu? I have been vegan for 15 years (vegetarian before that) and love beans, but if I only ate beans for the protein-dense foods, I'd be bored, so I have tofu about 3 times a week. I have the sprouted tofu from Trader Joes. Also, I am curious about your fats consumption; any oils, like raw coconut oil, or avocado (fresh)?

Only VERY recently I finally got off isolated vegan protein powder (daily for DECADES) and my gut is a lot better. I've not eaten fake meats for a long time, but they are an issue too. Processed food sucks!

Here in small town south Alabama the only low sodium BBQ sauce I've found is Foy's BBQ Sauce at 35 mg per 2 tbsp serving, sold at Piggly Wiggly. The other two local groceries do not sell any low sodium bbq sauce, Walmart Super Center and Winn Dixie. The bbq sauce combined with balsamic vinegar goes over all my steamed veggies, microwaved red potatoes, it adds so much flavor and I could not be whole food plant based without them.

Trace minerals, silica and menthylene blue. Silica and menthylene blue are supposedly good for mitochondria. Don't really know, it's the trace minerals that are probably good since the distillation process removes minerals that are normally in most water.

Any thoughts about the arsenic content in rice? I eat rice two or three times a day, and I've been told I should cut back or even completely eliminate it. But rice is my staple!

There is more arsenic and chicken, then and rice, but source your rice from California or from India, places where they did not farm using arsenic. I don’t think it’s a huge problem though.

Was getting around 1000mg daily in my food and had to be taken to the ER. They hospitalized me for 3 days for low sodium. They said it's a serious condition.
