Hi. Just a quick question; after the one day brine and then adding powdered seasoning after drying, could I refrigerate it for an additional day to really let the spices sink in or is that not necessary?

I have your books and use them frequently but every time i watch you show things i learn new methods I have missed . You have improved my BBQ by sharing your knowledge and I thank you for that . If i could afford the time off I would enroll in one of your classes . But thank you for taking the time to show us the right way to do things my friends brag about my BBQ all the time now !

I believe that's going to do the best job of dissolving all of the spices so that they're that much more likely to penetrate the meat.

That's a lot of added work and expense$$$ to just smoke a few turkey legs. Just sayen. I skip all that and just spray with Pam and season with whatever in in the mood for. About 2+ hours in the Recteq Bullseye at 275 and after resting they are absolutely delicious. They may be slightly better with the brine and butter and all that but as I said, not worth all that extra work.
