hi, how many minutes do you usually knead in the mixer? i just bought a stand mixer :)
May I ask questions? 1) Why don't you add butter it in the beginning? What is the reason of adding it later? 2) How long do you have to do the "stretch and fold" after the dough is blended? 3) Couldn't the machine knead the dough until it is has window pane ie ready to rise?

I think you don't know about this. I just learned that adding butter later makes the bread even softer!!!!! Please learn more before you tell people to use their common sense.

Katalina J the reason for adding the butter at the end is, u need to let the liquid combines with flour first, to form the gluten development. Gluten can form by hydrating flour. Adding fat early makes the hydration more difficult, and butter can bind to gluten to prevent the dough from getting too elastic, change the air bobble size and give a more smooth texture and add flavor to the bread. Altering resting times and yeast quantity also change these.

Katalina J sorry, thought that was all.😁😁😁 yes, u could let the machine takes care of everything, mostly, when the dough looks smooth and the mixing bowl looks clean from all the flour and butter, means it's done. although after let the dough rest (fermentation) for 1 hour or so, u need to divide the dough into small dough and let them rest again.
