I love Tony C. Great Creole seasoning. I'd add shrimp at the end. I love a sea component to my gumbo. The smokey component of the turkey is a great addition. A frozen spoon can help with the skimming

Another amazing video! I laughed when you toasted that sausage and said “this ain’t burned, the real cooks know”! I made a gumbo a few months ago, and I didn’t know about toasting the flour in the oven. So I was that person that stirred the roux over the stove for an hour. Haha!

Not sure about with the dry roux, but when I make gumbo with a wet roux I usually aim for a darker color, past peanut butter color but not quite to chocolate! I love how a roux noir makes a flavorful, smokey turkey gumbo :P

It ways less work than standing over the stove and stirring it constantly for 1 hour. Plus you get extra to make another gumbo or dish. I tend to prep the other ingredients while the roux cooks, which you cant do with a stove top roux.

yes, the thickness will be affected so I would add less broth in the beginning.

From New Orleans but I never seen anyone make the roux in the oven only on the stove. And you still gotta stir and make sure it don’t burn but imma try this. My mama got lazy and uses the Zatarans gumbo base which cuts the time down and it’s still delicious. I’m allergic to shellfish so chicken and sausage gumbo is my go to for the holidays. Next time get you some authentic hot sausage to add in there. Lol
