Okay, I might be some sort of heathen, but as beautiful as those sandwiches are, I can't think of a graceful way to eat them. Do you pick them apart from the skewer? Do you smoosh them down to be able to take a bite? Enquiring minds like mine want to know, because they really are impressively lovely.

We grow a lot of basil, as it is seasonal and only grows in summer, it does go to seed quickly. The only way to slow it down is to always pinch off the tips where you see the seeds and flowers are forming. Once you allow one stem to make its flower and seeds, the whole bush will go to seed so pluck away every day! This also encourages a full bush. If you can find globe basil, do try and grow it. It has tiny little and sweet smelling leaves and it grows into a perfect ball, so beautiful, and the tiny leaves are beautiful for garnish but fragrant enough to make pesto. When you have a big harvest, I pulse it in the food processor with olive oil and jar it. This is the only way I have found that basil gives that fresh flavour throughout the year. Dried it is completely different and frozen it loses its’ pungency. With the jarred basil, it is then easy to make pesto, just add an equal amount of parmigiano, and I like to toast the pine nuts and add them whole to my pasta. I hope this helps!

I usually push it together with one hand and pull the stick out with the other so that you can enjoy the flavours all together. You could eat it in layers though if you feel it's too big for one bite.
