We drove to Pontone and parked. You can walk into the Valle delle Ferriere from there. It can also be accesesed from Amalfi, near the paper factory or by walking down from Minuta near Scala.
Stefano's pesto recipe:
80g basil leaves
50g parmigiano
30g pecorino cheese
30g pine nuts or skinless almonds
1 clove of garlic
salt to taste
1 1/2 cups olive oil (In Italian this was simply 1 1/2 measures of oil. I'm not sure if a 'measure' is equivalent to a cup so maybe just start with a cup and then add more if necessary!)
Blend the nuts, garlic and cheeses in a blender until crumbs. Add the basil leaves and oil and blend. Add salt if needed. Freeze or use immediately!
