A little tip. Lower your oven temperature 25 degrees when you want your cake to come out flat instead of a dome. Had a cake business years ago. Hope this helps and Happy Birthday. Love your videos

It's my birthday today - though at my age, I feel quite old and not very celebratory! I'm 58 - I remember 33 as if it was yesterday - it was a hugely fun time in my life - make the most of every day you are given - the years go by so fast X

Tip for double layer cakes: I put the them bottom to bottom. That way the bottom "dome" is face down on the plate and second layer sits upright with the dome as the top of the cake. The flat sides sit together nicely. I've also seen people on bake shows use dental floss of cut through the dome part, and they still put stack the layers bottom to bottom.

To have a flat top to your cake layers is a simple trick. Tap the entire tin on the counter and watch the bubbles appear and escape from the top of your batter. Then bake for a flat top.

Several viewers have given great tips for a flat cake top. When all else fails and you're determined to get that look, just trim it flat with a thin long knife if your cake layers are thick enough to trim. If the dome is somewhat negligible, just put the dome side down, all layers. Icing is a thinner product than frosting and usually doesn't have butter or cream cheese. Happy Birthday!

You're correct that the Italian Cream Cake isn't from Italy. It's from the American South. Another cake you might like is the Hummingbird Cake. Similar basic ingredients to the Italian Cream Cake plus bananas, crushed pineapple and pecans. Makes three layers. A really good cake cookbook is American Cake by Anne Byrn. It has cake recipes from Revolutionary War times up through today. The final chapter covers frostings and icings.

I bake quite a bit and what's helped my cakes to be quite flat is simply to lower the temp. If a recipe calls for 350F I set it for 325F. Makes all the difference! Watching from Mississippi USA
