Long video but worth every minute!! I particularly like your laughter when you talk. My mum used to make this but I forgot the steps so I’m glad for a very informative video like this. Maybe you should use only rubber/plastic/wooden utensils for your non-stick pan so that the scratches at the bottom don’t get worse. 👍🏻

You can use 1teaspoon for 4cups of flour. It is. Leavening agent meaning making it fluffy and light. I put it in the freezer to help with ease of handling since I have a big batch. You can skip if you want to

Baking powder is not a must though it has it's merit. For example of I want more chinchin out of the amount of flour I am using (for instance for commercial use)I use baking powder coating it will let it rise more so I can cut them into really smaller size before frying... It also add to fluffiness of the chin chin(but if you follow the tips I shared for fluffy yet crunchy texture this should not be a bother for you if you decide not to use baking powder)

Juliana Isaac hey Julie. I don’t make commercial chin chin but I have heard people use something like Ascorbic /Lactic acid (in form of powder) as preservative and I will advise you add baking powder so you get more chin chin out of your dough.

Thanks. Apologies for the late response (as I always try to respond to my feedback within 24hrs). To your questions: 1) I will say it depends on what you are aiming for. If you really want your crowd to have a very rich experience of chinchin, I will say just follow the recipe to the "T". But if for cost and time consideration, you can add baking powder to it and cut the shapes smaller than I did to get a larger quantity (the baking powder will make it rise out and fluffy) 2) a flavorless oil is the way to go for frying so it does not alter the taste of your chin chin.

Some people do but be careful (maybs use less amount of oil when compared to butter)since it is liquid fat it will add more moist to the final texture thus might not be as crunchy as if you used solid fat . Moreover the butter add more flavor and richness to it though .

Are you talking about the finished product or the cut shapes before you fry them. For both questions, YES you can freeze. I have not dont that myself but definitely you can freeze for days and fry later. The longer it stays in the refrigerator(causing it to dry up more) the more crunchy result you will get . Hmmm...🤔. I haven't tried it before. I know honey has been used as substitute for sugar to add sweetness in baked goods or grilled meat etc. However I have yet to see it used in fried foods especially if it will stay in the hot oil for a while..my concern is that it might burn and again the taste might be lost in the process in addition to the health benefit. However I never say never , he can try it but he should make a ver small batch first and see how it goes. Another thing i might try if I am doing this will be to really really regulate the heat and probably fry at low temperature so basically slow and steady. Again note this will be experiment . It might not work or turn out to be a beautiful mistake as well. I hope this helps

Lets start this way to find out qhat is going wrong...it might not be the flour that is the problem😊... What is the name of flour you used? Did you do EXACTLY as I did? What did you use to weigh your ingredient (weighing scale or regular cup measurement)?

No Lawunmj. The egg and milk will not make it spoil quickly especially if your are refrigerating or freezing it.

How can u know the amount of butter and sugar? And again you are not using baking powder

I didn't use baking powder because it was my preference and to show that it is not a most ingredient 😊. Check my baking percentage video to help you with knowing how to know the quantity of ingredients when compared to flour
