Hi Krocks, I’m going to challenge you guys to look into rice...YEP! Rice. You stated in the last video that you didn’t think you could eat rice for two weeks. There are endless types of rice...not just white or brown rice...all tasting a little different including “black rice or known as forbidden rice (because the Chinese Emperor and his family were only allowed to eat it with great taste (this one is low in calories and high in vitamins), long grain with wild rice, jasmine, etc etc.... Add different spices & veggies (like onions, celery, spinach, broccoli, cauliflower etc to the pot and simmer = amazing = every filling too. Look up rice casseroles and also rice with the words “Moroccans, Spanish, Indian, pilaf rice, vegan fried rice, bali Indonesian rice dish etc”. On you tube you can look up vegan rice etc. What’s great about cooking rice is it’s CHEAP, you can buy in bulk & store it for long periods of time and easy to cook. You can cook it in the oven instead of on the stove or in a rice cooker....just put it in a dutch oven or casserole with a lid at 400 for about 20 to 25 mins...or until most of the water is absorbed by the rice and then set on the counter for 5 mins. You can also make a double batch and freeze it for another time, which is a nice way of planning ahead. At the same time in the same pot you can cook your veggies with it. One pot cooking. You can eat stuffed peppers use green peppers vs yellow/red pepper, because they are cheaper and you wont notices the difference in taste. For stuffed peppers (not sure if you can do the Mary’s mini with stuffed peppers?)...clean peppers & cut the top off, then clean out the inside, place the peppers in a large pot of water for about 15 mins or until tender but not falling apart (usually they will turn a little different color and then you know they are done). Prior to making the stuffed peppers I make Moroccan rice in the oven with can tomatoes, onions, mushrooms (can works), spinach, the tops of the peppers you cut off (really any veggies)...then once the peppers are done, take them out of the pot, cool them to handle & stuffed them with the rice, then eat. I like to cook many at one time to have for a few days. Peppers do not freeze well after cooking. So I usually cook rice and then freeze the rice so that when I want stuffed peppers & just have to heat up the rice in the microwave and cook the peppers in the pot. Simple meal but really good. Many videos on you tube. If you Go to the Walmart website and then do a search on “rice”. They have page after page of rice in boxes with spices already or in the bag for you to add your own spices. Cheers to your success!! I’m sure Trader Joe's has a lot of choices too or your local Asian market or International market. If you look in the International section of your grocery store you can find rice spice packets too. Try rice...you might just like it better then potatoes...maybe?!?!

Hey Mike! NOW nutritional yeast powder is only $7.54 on Amazon (81c per ounce). I use the whole thing in about a month even when I've eaten meat. Adds really great flavor. It's amazing on popcorn.

Nutritional yeast adds plant protein and flavor which is a great way to resist cravings. I actually use the even more whole-food plant-based protein-rich product called Brewer’s Yeast which I order from Swanson’s Vitamins online-very reasonably priced. Give it a try! If anyone ever asks you again “where do you get your protein?” you’ve got that covered. Two tablespoons of brewer’s yeast has about 35gms of whole-food plant-based protein. As much as a steak, but all good for you! Also, brewers yeast is one of the few plant based sources of vitamin B12 which vegans usually need to supplement with. You have to eat a lot of it though for the B12 benefit, so recommend you take a B12 supplement if you are whole-food plant-based. Good luck!

I started a WFPB lifestyle one month ago today and have not only lost 10 pounds, but am off (with my doctor's help!) type 2 diabetic meds, 1/2 of my bp meds, and all cholesterol lowing meds. I've been a fan of mustard with potatoes for a long time, and I use the same seasonings you do. YUMMM! The only thing I really do differently is that I use my instant pot instead of boiling the potatoes on the stove. That way I don't throw away any water-soluble nutrients when I drain them. (OK, it's REALLY because I'm a klutz and always manage to burn myself when I pour off the boiling water. But keeping nutrients is a plus. Whatever!) Thanks for sharing your journey and your great content!

This is just about the same recipe I use!!!!. Except I dont use the mustard. I love to add paprika and a splash of hot sauce into my liquid stock!. Great job guys... I get in the mood and could eat nothing but mashed for days!... I have to try the spinach. I love to eat with green beans and peas... idk why

I don’t know how true this is but I once heard a chef say that all root veggies should be started in cold water first, then brought up to a rolling boil. You might want to try and do an experiment and see if there is a difference.

I noticed that in a lot of recipes too, but Brian is a rebel LOL 🙃 We will definitely try that way and see if there is any difference. I think if anything it would help them cook more evenly, but with the smaller chunks we cut ours into it might not really matter as much!

I was taught that anything that grows below the ground such as root vegetables should be started with cold water. Above ground veggies, corn, green beans, etc., start with boiling water. I made the mashed potatoes this evening. Amazing! I could hardly believe they were made without butter or milk. I did change two things based on what I had in the pantry. I used Yukon Gold potatoes, and Dijon mustard. Next time, I will try the recipe as written. Thanks so much for sharing this.

Your journey is inspiring. If I didn’t just purchase a case of fresh Georgia freestone peaches i would’ve jumped on board! Giving up fruit is a sacrifice especially when they are in season. Anyhow, I do love the concept of a single starch prepared simply. It’s liberating not to obsess about variety. The mashed potatoes recipe is outstanding! I’ve enjoyed it for three days straight - topped with hatch green chilies. I thought it was salsa but to my pleasant surprise, I liked it better! It’s got the heat without any heartburn! My life was also greatly helped by the McDougalls. Now vegan over 30 years (yay!) Draining the tates first really makes a creamy mash. But i save and drink the water. It's delightful! And i add my veggies in at the same time. So i have potatoes, carrots, celery, broc, caul, beets, salt, cayenne, turmeric, as a mash. And greens at the end, barely wilted. I love it.

Ground white pepper is my secret ingredient in mashed potatoes. I also like to add spinach fresh or frozen to mashed potatoes in the food processor. It’s a great way to introduce spinach to kids. Mine used to beg for green potatoes. 😋

Mustard is good on hash browns too! Yum! Mashed potatoes freeze well, so don’t be afraid to make extra if you have room for some in the freezer. Way to go guys! You are rockin this Mary’s Mini! I’ve never heard of it before you guys did it, so maybe I will look into it. 👏🏼😊

Im slowly adding the Mary's Mini style meals into my daily routine, until I can wean myself from coffee for a few weeks anyways . I basically eat about the same as ya'll do for b'fast and lunch, then dinner I LOVE Amy's Golden Lentil Soup with a toasted piece of pita for dinner and have been sticking to that for now, just to see if I can do a 3 for 3 potato heavy meal on the reg. The hashbrowns for b'fast is SO yummy and I find myself loving the way they smell while cooking, thanks again for all the inspiration guys! ~ Melynn

Excellent recipe. I “discovered” mustard as a favor enhancer for no SOS PBWF vegan dishes a bit ago and it’s GREAT! You might want to try a bit of horseradish. It really works well with the mustard I find.

Have you tried roasted potatoes with Old Bay seasoning? I cube my potatoes, lay them on a baking sheet and sprinkle with Old Bay, then roast at high heat 425 F or so until their done. It's the best.

Just started a Mary's mini of my own. I have been plant based for about a year trying to lose weight and tone. YMCA 3 days a week and walk about 25 to 27 miles a week. Lost 9 lbs since May. Hopefully the mini will shake something loose and get me going.

I just tried mustard on my Yukon gold potatoes with pepper sprinkled on top. So good! I am so hungry on the potato diet. How did you all manage it for two weeks? Do you think adding sweet potatoes will help quell my hunger?

When we did the plain potatoes we were hungry because we couldn't stand to eat more potatoes, but with Mary's Mini, it has been just fine since we can have so much more variety and also the veggies really help. I've been eating larger portions of the veggies to stay full.

Looks tasty! I have made a simple potato dish you might like... thinly sliced potato, layered in a dish with sliced onion and nutritional yeast, add veggie broth and bake in the oven until tender... you can add other seasoning... like Garam masala or paprika...

Oh my gosh, I also use Better than Bouillon Organic Reduced Sodium Seasoned Vegetable Base - yay! It's so good; it's the only thing I have that contains sugar, but I do love it. I really appreciate that you leave the skins on the potatoes, too :)

Thank you for sharing! I'm going to try it. I think Chef AJ also suggested adding some cooked cauliflower to make the mashed potatoes less calorie dense. I haven't tried it, though.

Use a few golden potatoes for a creamy yellow buttery look and taste in addition to the mustard, or leave out the mustard. I personally like the mustard, just made these!

Great vlog x I always use veg bouillon and mustard powder in my mash coz it's much nicer than butter, etc. We have a recipe in Wales called ponchmaip and it's potato and swede mashed together. Delicious. Swede is sometimes called turnip depending on where you live in the U.K.

I’ll have to try the mustard. Never really thought of that before but I always loved mustard potato salad so I bet it’s great! I do mine in the Instant Pot. I put about a cup and a half of veggie broth in then add the potatoes and pressure cook on manual for about 15 minutes. Vent the pressure and mash! Love my mashed potatoes.

How much potato are you adding? I’d like to try it in my instant pot, probably not 15 minutes, though.

Marianne H 15 minutes is probably overkill but I don’t slice them I throw them in Whole so I just want to make sure they are done all the way through. I don’t really measure I just fill my 6 qt about 3/4 full of whole potatoes and the cup and a half of veggie stock. I usually throw a teakettle of water on the stove to warm up while they are cooking and I use that water when I start mashing if I need to thin them out more to get The consistency I want. Sorry I don’t have a more definitive answer I have always cooked intuitively and I don’t measure a lot of stuff. I actually don’t measure the veggie stock but I know that’s about how much I dump in there. If you dice them up I’m sure you could cut the pressure time down considerably.

Marianne H Instead of baking potatoes I do them the same way I just use a basket to keep the potatoes out of the water or stock I’m using to steam them with. Pressure 15 minutes and release the pressure and eat. It doesn’t heat up the kitchen like the oven does and the only real difference is that the skins will be softer than if you baked them in the oven. I eat the skins so it doesn’t bother me that they are softer. Couldn’t live without my Instant Pot. I have two a mini and a 6 quart. I use them all the time.
