Looks great! I'd probably do it with baby carrots instead of regular size carrots and put them in aluminum foil and pressure cook them the whole time with the rice and chicken. I missed the measurements of the seasonings. Do you have those somewhere?

Followed this recipe tonight - absolutely perfect instructions! We didn't have the carrots, but adjusted accordingly, and our rice and chicken breast dinner turned out wonderful! If you have any culinary skills, you can adjust as necessary based on what you have. The rest is just common sense, and this video gives you a great beginning! Thumbs UP!

that's a good question and I'm not sure because cutting it in half would mean cutting the liquid down. I would probably keep the same timing.

Same time and directions. It’s the rice that takes the 30 minute cook time. Also, these carrots were firm, so increase the steam time if you like them softer. Or, what someone else said they were going to do is wrap the carrots in foil and just PC with the chicken and rice.

Yes, that should be fine. Look at the package instructions though and see how quickly it cooks, you might want to decrease the PC time a bit.

When using pressure to make cake could you use the same cake release on the foil that you use to cover the cake pan so it will not stick to the top of your cake? Thank you.

I think you are asking if you can brush the foil with the pan grease I use for the cake pans. That is a good idea, I honestly didn't think about it. The only thing that would prevent me from doing that is it might get on the cake top when heated. That shouldn't matter too much if you are frosting the cake, but I would use a very thin layer.

Hi,, nice recipe. My question is aboiut the carrots. Yours came out a little , crunchy? so you said to let it go a little further with the time for softer.. You also said Thighs are very forgiving. So I am afraid of getting the chicken to too done. Can I just cook the carrots at the very beginning up to maybe 2 or 3 min. instead of "0" minutes? to have softer?

Hi! Yes, mine were pretty firm. In the actual written recipe, I suggest a 2 minute PC time for the carrots. It's hard to overcook chicken thighs even after 30 minutes of PC time it was so juicy. You would need to get your chicken to cook in the 2 minutes it takes for white rice to cook. I would par cook them with sear/saute first. Then PC for 2 minutes with a 5 minute natural release.

I'm not sure how to answer that because I PC the carrots for 2 minutes in this recipe. Then bake them at the end. You can always increase the PC time though for softer carrots.

Wild rice takes a lot longer to cook then parboiled rice, so I think you probably ended up with mushy rice. Hopefully the flavor was still delicious! You can make this recipe with regular rice, but the chicken needs to be thawed and seared so it cooks in the same time as the rice and carrots.

I don't think I'd try it with frozen chicken tenderloins because by the time the rice is done, they will either just fall apart or be too dry.

I did some rice last week, but it was the kind in a cooking bag. I thought the steam in the pressure cooker would cook it all through and through. Wrong. The only rice that cooked was the part that was fully submerged. Take this kind of rice out of the bag so it will all be completely submerged and none is held above the liquid by the bag. The pressure cooker does carrots great.

The Salted Pepper I think it was about 12 minutes. There was rice in the top of the bag that was crunchy like it was right out of the box. Anything below the surface was great. The water level went down while the rice cooked and soaked up the water, and I couldn’t see that in the closed pressure cooker. It would have been okay with more water. But taking it out of the bag would assure that all the rice was submerged even if the water level dropped.

Something else I wanted to ask you about. Last night I was dreaming about a Ninja Foodi. Mostly because I fell asleep with the TV on and a Ninja Foodi infomercial was playing when I woke up. But in this commercial they cranked it up to 450. Mine doesn’t go that high. Does yours, or was I still dreaming? Now I have to stay up all night searching for a rerun of that infomercial.

Nope, the highest setting is 400. I have done a few temperature tests on the broiler function and the broiler does heat up above 400, but I can 't remember if is was as high as 450
