A plum cake in autumn is really popular, right? An absolute must for a cake counter or a coffee party in the afternoon. With a juicy yeast dough, crispy crumbles on top and of course fresh plums. It brings back memories of the cakes my grandmother baked, they were really the best.
A ø28 springform pan was used here.
Ingredients for the yeast dough:
220 grams of flour
40 grams of butter
60 grams of sugar
25 grams of yeast
100ml milk
1 egg
2 sachets of bourbon vanilla sugar
pinch of salt
For the plums
700 grams of fresh plums
Possibly 2-3 tablespoons of sugar
For the sprinkles:
150 grams of flour
80 grams of sugar
125 grams of butter
1 teaspoon of cinnamon
Baking time: 35 minutes 200 C° top and bottom heat,
If necessary, simply finish with 250°C top heat for a few minutes.
