I have been to North Korea multiple times and lived on the Chinese/North Korean border. These are not their cold noodles. Everything is wrong.

Hell, they probably don't have water to boil the noodles in. They just leave the noodles in Kim Jong-Un's underwear for a few days until the ball sweat and body heat make the noodles chewable.

I didn't mean to mess this up. I was just commenting on how ironic that the food looked as depressing as the country it came from. I would like to be able to try both foods. I guess I was thinking about what the actual North Koreans were eating when I stared this comment. So I am sorry if I offended anyone.

Hi Mike, Both noodles you tried are called naeng-myeon, with the direct translation meaning "cold noodles". Cold noodles originally hail from the northern part of Korea, which became popular in the south after the Korean War, when the northerners who moved south before the war started to make it. There are two versions of cold noodles-- plain noodles with a beef broth, which is the first & third ones you tried, and the spicy kind, the second one you ate. The non-spicy soupy kind originates from the Pyeongang province of Korea in the north. The spicy kind are dry noodles with minimal broth, and originate from the Hamheung province of Korea also located in the north. Hope this helps with the confusion.

The one i had in cali comes with the spicy but i wanted it separate since i didnt know how spicy. I like it a lot but not love cold noodles. I'm very picky with noodles.

I went to Pyongyang in September 2015 and ate that same soup. It was really tasty and actually they gave us vinegar and mustard... but imagine how surprised I was when I discovered they have mustard in NK!

Actually, the cold noodles are all originated from North part of the Korean peninsula before Korea was broken into two countries. The one you ate as South Korean cold noodle is Hamheung-style cold noodle, and the one as North Korean is Pyeongyang-style. Hamheung and Pyeongyang are major cities in North Korea. The two styles differ in the preparation of the noodle. Pyeongyang-style is mostly made of buck-wheat and thick. Hamheung-style is made most of starch from sweet potatoes. The preparation also differ, P-style in cold soup, H-style in hot paste source. But as you experienced, the two style can also be served both way. Those cold noodle restaurants in South Korea were started during the Korean War period by the refugees from North Korea, and the two styles are originated by the refugees of each respective region. Now the cold noodles are popular food for summer time, in the old days they were winter foods. Because you cannot get cold broth in summer in old days before refrigerator.

North Korean noodles are more like drinking water flavored with salt and milky powdered white bean water. you're supposed to put chopped kimchee in it also and put little seasoning of sesame seed oil and bits of seaweed and green onions etc. South Korean cold noodles on the other hand are like eating candies. I definitely think Mikey should have gone for North Korean cold noodles before South. They say hunger is the perfect appetizer. You don't enjoy and appreciate the food as much when you are full already.

Actually, the first noodles you ate were hamhung nengmyun, which is also North Korean. Hamhung is a city in N Korea. The second noodle you ate were Pyongyang nengmyun which originates from the capital of N korea. S korea isn’t known for its nengmyun, but it’s known for makgooksoo which is a similar buckwheat noodle dish

they are buckwheat noodles though they are just a different thickness compared to the north korean ones. potato starch noodles looks translucent when cooken while wheat ones are much tanner and paler. maangchi has a good recipe on both types of recipes

Don't forget to call your female waitresses"unnie"(sister) or "emo" (aunty)... unnie moreso for younger women, and emo for older.... just stay away from saying ahjumma - some know when it's appropriate to say, but it's meant for much older women so someone younger might be offended lol. It seems like that suited for 50 years and older at the earliest?

Nickolah Lyn Mike is male so he should be calling the younger women "noona". then again you don't really address the younger waiters as either "noona" or "unnie" (at least I don't). I just simply raise my hand or whatever to get their attention.

So "Unnie, takeeyo..." (basically to say excuse me please and call over to your table.) "[Food you're ordering], jusaeyo". (General word for saying please in the polite form.) Then "baegopayo" or "paegopayo" (the first letter represents "b" and/or "p", so I've heard it both ways and a mix of both letters.)

I have to clarify having eaten both varieties of Cold noodles (Naengmyeon). Firstly what was eaten in South Korea was (Mul-naengmyeon and bibim-naengmyeon), both are popular and common only to S.Korea. Real North Korean Naengmyeong , or Hamhung style-Naengmyeon uses raw Gwong (or Pheasant) in a similar style to Bibim-naengmyeon or Hwe(Hoe)-Naengmyeon. (Romanization of Korean is very tricky due to lack of standardization) ... NK Naengmyeon It is definitely different from what is being described in the video. Also along with the meal one would typically be served a Wang-Mandu (giant dumpling) that takes up an entire small serving dish. Usually packed full of piji (tofu curd), Shitake-mushrooms, noodles etc.. sometimes pork is added. Finally to put to rest the notion that NK cold noodles are cold because of lack of electricity is nonsense. Cold noodles are generally only eaten during late spring - fall.

The North Korean noodle bowl is much fuller than I expected it to be. I thought it would be pretty much empty, maybe with a little bit of water at the bottom of it.

He should have travelled to North Korea and tried the authentic cold noodle soup, like they cook it there: the contemporary dish comes without the meat, vegetable and eggs - and without the noodles, though the broth is traditionally cold. Not going to win any Michellin stars but if you plan to go on a serious diet, eating North Korean-style is the way to go!

Then you miss on a lot of goodness. In Poland cold soups aren't very popular, but we do have couple of kinds made from various fruits (eaten with noodles) that serve as kind of dessert. And varieties made from yoghurt, kefir or sour cream - with sliced cucumbers, onions and chopped dill. They are served with young potatoes. And of course cold beet borsht - king of cold soups :) Of course cold soups are eaten mostly in summer :)

Little history lesson. From what my parents told me is that cold korean noodles came to be, from the harsher korean winters back in history, where this required less resources to prepare. The broth in the first noodles is a type of beef consomme. The second is that to kin to zaru soba noodles in japan. South korean thinking is that in the summer you want to eat something hot (thermally speaking) to make the weather seem cooler in comparison. So cold noodles aren't eaten as much in the summer by older people (the younger generation do what they want :p). I know it's confusing, It still confuses me, but that's how it was explained to me :p

yeah these days its very much a summer time dish, so refreshing. but koreans also like to eat hot soups during the summer, very counterintuitive. when you eat a hot soup during the summer there's a saying '시원하다' which is kinda like saying, so refreshing! i didn't understand it when i was younger but as i get older I'm starting to appreciate it.

Yeah, it's interesting how food develops around the world, what kinds of things become popular mainstays due to economic conditions, and things like that. I can only suppose that the flavorlessness of the North Korean dish has some explanation looking back toward the roots of the dish, and I find myself curious as to what it might be. Is North Korean food typically light on flavor in general, or is it something only found in certain dishes like the one in this video? In any case, this was an interesting video. I might have to watch some more.

I LOVE THIS! His explanation of his nostalgia of the buckwheat noodles that his grandparents made in China (and is now experiencing in North Korean style noodles) is similar to my experience of eating some Gorditas in Ciudad Acuna (across the border from Del-Rio, Texas) that tasted just like the Colombian arepas that my grandmother made in Colombia!!! So much feels in this video!!!! All that said, I grew up eating awesome authentic Korean food because my best friend in high school was Korean and I was the only one of his American friends who went nuts over his mother's and grandmother's amazing cooking skills. I ate EVERYTHING and his grandmother approved when I made a huge burp at the end of her epic meals. I was like in culinary heaven at their house and I relish the memories such as being invited to taste fresh kimchi freshly dug up from a traditional clay fermentation pot and still bubbling with carbonation. Words can't describe that deliciousness!!!!

Like Mike prefers Northern food, vinegar and spicier. Buckwheat noodles, don't recall them in Southern noodle shops either. Southern noodles are usually not vinegary or hot, and focus on fresh ingredients. In the North the food varies by region as well.

In Northern China, noodles are usually made of wheat, the main staple in the north. In Southern China however, noodles are usually made of rice which is the main staple in the south. Flat rice noodles known as 河粉 or 粿条 and/or rice vermicelli known as 米粉 are especially popular. Of course there are also other noodle varieties made of wheat in the south e.g 麵薄 / 麵仔 / 竹升麵 but there are no noodle varieties made from rice in the north. In Singapore where I'm from, there are many types noodles which originally came from the southern coastal provinces of China, mainly from Fujian (eg 肉挫麵) - and yes - we do have vinegar, chillies & lard in our dry noodles. I have ancestry from Southern China but my personal preference are noodles from the north eg 拉麵 ;) They are somewhat cleaner tasting and have a better texture to it

the vinegar in the Korean cold noodles are a great way to balance off the grease from grilled meat. that's why they always go hand in hand. kind of like how make vinegar goes with fries in the UK. It's also why they have those picked daikon cubes with their fried chicken which are amazing

I love Mike's food videos, I just think this video over-generalized the taste of naengmyun based on very little exposure (two restaurants). I've had plenty of naengmyun in Korea, US, and China... each restaurant has its own take... some sweeter, some spicier, noodles are different textures, etc. But he definitively concluded South vs. North based on one dish from one restaurant?! p.s. stop with the unoriginal North Korean jokes

Probably the most authentic North Korean cold noodles (outside of North Korea) you will get is in Yanbian region of the Jilin Province in China. Whatever Mike ate, it was not North Korean cold noodles...

Man, I think you just went to a wrong restaurant under the name of North Korean Cuisine. I think there is no big difference between North and South Korean for Leung Mien Noodle. difference is the noodle, not the soup. I tried it and I knew. If you traveled to North and South and ate more than 10 restaurants at each side, then you have right to tell the difference. Otherwise its just a bad restaurant in your area, that's it!

can't really blame him. as a host he have the disadvantage of "not knowing the locale". the other channel also have this similar controversy when going to a roti place in Canada, with a verified youtuber even chiming in and wrote that what the host got isn't the "real deal" roti. the host can only have so much research and connection (to tell you where to go)... just consider him "unlucky" to stumble upon a bad (not top tier) place...

Simply go to the Korean supermarket in your area and talk to some Korean people, then find the Leung Mien Noodle in package to buy, then you will know. I like his Channel with varieties of food and courage of trying new things. But food behind is the culture and history, Even Korean split to North and South, but they were used to be same country, so the traditional food is same! I don't like people who doesn't understand a thing try to confused more people who doesn't know at all. That's it.

Economy wise, of course North is lack of food and material. But the difference is the noodle, they used much cheaper noodle instead of buckwheat noodle. The original NaengMyeon has 2 different style, and he tried them all in one restaurant already! Do some research please and stop defending for ignorance and spreading discrimination by food,

Pyongyang cold noodle is the one with soup which is from North, HamHeung cold noodle is the one without soup which is from South and seashore area. Noodle is different and he should know one basic rule is not to judge the food by political opinion, because food is just food, traditional food existing for thousand years and politicians come and go, nobody cares. Even the country split or not, the north style of NaengMyong noodle is still enjoyed by Korean people doesn't matter South or North.

Sorry to be the "fact police" but both sets of noodles you had are North Korean origin. First two are from Hamheung region (so called Hamheung Naengmyeon) near where the famous "Hungnam evacuation" during Korean War took place. And, the last one is from Pyeongyang (so called Pyeongyang Naengmyeon) where Kim Jong Un is currently killing another member of his relatives. As many of my fellow youtubers commented, North Korea is suffering extreme poverty. So, these cold noodles have become something of delicacy that only upper-class and foreign tourists can enjoy. The cold noodles were popularized in South Korea by people who fled NK during the Korean War, and now have become some of the favorites for South Koreans.

Surprise! They’re both North Korean style noodles😅one from Pyongyang and one from Hamhung. Personally Hamhung cold noodles are the best type. They do have “South”Korean style cold noodle called Chilk cold noodles which is made from arrow root? But it tastes meh :/

good job on graduating from the cold korean noodles. it means that you are very very very korean. I'm korean and it took me many years to really know the taste of this type of noodles and enjoy it thoroughly. I absolutely need to have a bowl of spicy naengmyun after some bbq. It is seriously amazing way to finish the meal.
