@@JoelsTastyRide i have to tell you. i posted that comment before i showed your video to my mother (she loves her chiang mai food). she is utterly nitpicky about accents and pronunciations - we both are - because her mother was a teacher - a STRICT teacher (eg, krub is krub, not kraaaaaaab or kup, kroo is kroo, not koo) - and SHE was completely impressed with your accent. so major kudos.

"Northern Thai food is smokey, meaty and spicy" yes!!! Finally someone who captured the lanna food essence!! Also, when you can, bike towards Sankampaeng district and try the restaurant "เฮือนใจ๋ยอง" and try their แกงแคกบ, จอผักปั๋ง, แกงผักเชียงดา, คั่วโฮ๊ะ, สาผักกาดน้อย... all super traditional, home-style, Chiang Mai dishes.

The colors can be a bit muted as most things are either boiled or grilled, or both haha, but man the flavor is SO rich, definitely deserves its place in the spectrum of Thailand, its regions of amazing flavor!
