Have watched Marks channels for some time but never realized you have your own channel. I have now been watching your videos in the mornings before work. Gives me much peace with you love of people and nature. I have been a nurse for almost 30 years. If not for the beautiful people I care for and meet, I would have left the profession long ago. I too love learning all I can about others.

I did not exactly want to make the channel a "Food Channel," but as food really is such a big part of how I connect with people (just a common passion, especially in Asia where it seems that 50% of all people on this continent have food as a personal hobby :) :) :) hahah)... it just ends up containing a lot of food. Thats solid. you have a great connection with people and it shows - from appreciating their culture to learning their language (and the dialects and language learning within) its great vids man. Hi Ron I hope all is well today, I am smiling at the word make a professional, I am definitely still working but wow I really appreciate your support and praise. I think that you do know quite a bit about the food of Thailand, so I know you appreciate this, and I also can see that you have a real respect for people and how everyone should be treated equally, so yes I really do indeed appreciate all of your comments. That is awesome you were able to find some mango at the market, do you know what, thinking about the price though, we do have to remember that the proportions are what is really important, not just the straight up price. For example, I survived here for several years on a salary of $750 a month, and I actually saved money, I felt very blessed, but that is a good example, therefore I guess on roughly the same wages in the USA, I could get five mangoes for one dollar, but I only make 1/5 of the wages that I would were I to live in the US… OK that’s a long message now ha ha I know you understand this already, thanks for humoring me :-)

Yooooo! Nyunt! Well man... cool message, I am smiling but hey, its very possible to eat (meals like this, not every day! but several days a week) and have your weight stay the same. Its simple actually! Just, in this case, simple and 'easy' are not the same thing. For example. If you wake up and drink water, have a very simple fruit shake with a spoon of pure coconut oil, then eat one handful of peanuts, do some work writing/editing and 3-4 hours later go to this restaurant and eat all the same food that I ate, come home and again do 3-4 hours work writing/editing, and then finish your day with green tea, lime juice, any flavored water you want... read a adventure story in a book and go to sleep. Thats a great day!!! And then the next day, ride your bicycle 70 miles (120km), have a HUGE bowl of oatmeal or porridge, TONS of fruit, and a GIGANTIC salad with every vegetable under the sun.... do this alternating every other day for a month. I can promise you, you will gain little to no weight at all, you might even lose weight. Ive been this "diet" which is more of just a habit by now, done it for years!

Urm.... I cycle 212km.regularly to find great food.... 😳 I wish! Definitely so inspiring Joel!!! My gosh! That salad!!! My baby says that she needs me to put it in my belly along with the fermented fish sauce!!! Yum yum yum! The salad looks so incredibly fresh and delicious!!! And the banana leaf wraps, there's always something fun about unwrapping a banana leaf and finding out the yumminess that awaits! Hi Sandra great comments today :-) so glad you are enjoying these videos :-) a big big part of the reason that I made this channel, and a big part of the reason that I include all the details is for health related reasons. So I am happy that you are making these notes today. While the cycling does help with metabolism, most of a persons weight loss or weight gain will come from what they eat. Exercise is a great thing, but I think current science puts the number somewhere around 20%. The majority of contributing factors are still 1) what you eat and 2) your genetic predisposition. So on that note, Mark and I are both lucky to have metabolisms suited for large meals however you have to know that both of us are extremely healthy eaters when we are not on camera

Hi Jennifer :-) well thank you very much thank you… I have always liked talking to people and now I guess the camera does make me a little bit more nervous actually, because I don’t want to pressure anyone at all, but it is making it fun to actually stop riding the bike just specifically to talk to people! The only downside I have about these long rides is, the pressure is on to finish the ride, I know that I can’t afford to stop too much… And over the years I just get into the habit of going on and on, maybe 100 km without even stopping one time. So having the camera now forces me to focus on what I really want to focus on, which is the people :-) I did stay in a tent actually ha ha I just didn’t record it, I sweated the whole night sleeping back down at low elevation. I should’ve stayed up on that mountain!!

@@JoelsTastyRide we normally travel to Thailand about 5 times a year. When the kids were younger we did a lot of touring in Northern Thailand. Now I mainly come for shopping and the food :)

Wow that is an awesome question two questions actually, yes camping is amazing in Thailand. It is almost completely free. In the national parks they will collect some very small charge, it costs more for foreigners but that makes sense, And yes I have kept many many many places around this awesome country. Joel. When I helped out with a Pro bike team, The soigneurs recommended a farming product for Chammy shorts, Used on dairy farms for cows nipples! Not sure if you could find that in Issan!
