I was wondering if dried/dehydrated persimmons a good source of potassium? is it ok to eat in moderation if you have type 2 diabetes?

I have a question. Why do we need to eat so much oat meal? Can't we eat more veggies to get more fibre? I only eat quarter cup of Bran buds with a bit of milk. Eat a lot of veggies in other two meals. Is that good diet? Thank you so much. Kally in Calgary

There are two types of fiber, soluble and insoluble. Oatmeal is a whole grain with soluble fiber which may be helpful in lowering cholesterol; also, oatmeal has insoluble fiber as well. Bran buds are made from wheat bran, the fiber is predominantly insoluble. But we need both soluble and insoluble for good health. But you are right, you don't have to eat oatmeal, but you do need a lot of vegetables, fruits, beans to provide a lot of soluble fiber. Your diet contains a number of healthy foods, keep going!
