Thank you for this recipe. Made them this morning and they turned out delicious. Perfect for 'slimming world' plan as both eggs and bananas are 'free' foods. No calorie counting. These were very good. I used some very ripe bananas which made them very sweet, didn't even need syrup. Will be making again, next time with some chocolate chips. Thank you for sharing another delicious recipe.

I like when I make buttermilk pancakes to mash half a banana and spoon a about 2 spoonful of the batter over the banana and mix and I can tell you that the flavor is great. I'm single and sometimes I just want a single banana pancake with my buttermilk ones to have some different tastes. The pancake recipe I have is from a Charlie Brown cookbook I found 40 years ago in a secondhand shop. This was before the internet and being Scandinavian I couldn't get a recipe for American buttermilk pancakes until I got this small book. It has the egg whites being whisked stiff and this makes for a very light and not so thick pancake. And with the mashed banana it is great. But from what I know your way is the original way to make them. Thank you for sharing!!

I know, I've never seen anyone use that either and they don't get as thick as the ones on youtube but the texture is what I love. When I found your recipe I was looking for the real recipe because I knew mine was not:) And the ones with the banana slices well I wanted the banana to be part of the pancake like you do it:) I lived in the US as a child for 3 years and will you believe I never tasted an American pancake? My dad was/is a chef so we didn't really get to eat out. Then the baking mixes came to Denmark they were awful. At that time I had found the Charlie Brown cookbook and was used to those. So about 7 years ago I went to New York on vacation and the first thing I did was to get a pancake a buttermilk one. But I was surprised at the taste or rather the texture. I guess the whisked egg whites makes a big difference in texture and that was what I was used to. But I have an eating disorder. I have like more sensitive taste buds and things such as textures, smell and how a thing looks is different for me. It's a pain in the butt. There is one great thing with my recipe (without the banana) I can use it for at least one other thing and I want to try it as waffles too. If you type in Aebleskiver here on youtube you will see these wonderful desert balls we eat especially at Christmas time. They are made with batter and a special pan and some people put apple inside. It's an art to make them nice and round. I use my batter for that:) Most of my huge American family have a pan and love them. I will try out your pancakes this week-end and invite my daughter to share. Say hello to your wife from me she sounds like a person that is fun to be around:)

Chef Buck try this simple recipe. One banana mashed fine in a bowl. Add 2 eggs and beat them together well. Pour it in a skillet, cook till one side is done, divide it down the middle, flip the two halves, cook till done. Delicious. Some people make little pancakes out of the mix too. It’s great. You gotta try it.

Hey Chef, have you ever tried buckwheat flour? I recently learned that it's not even a grain, it's a fruit seed. It's gluten free and contains all the essential amino acids. I bought a grain mill, ground up some buckwheat and fermented it over night with some goat milk kefir. In the morning, this made super easy, delicious, and nutritious pancakes. You probs already know this, but fermenting grains, seeds, etc, breaks them down to where the human body can easily digest and absorb the nutrients. Buckwheat, Chef Buck, makes sense. Cheers!

+Rob these cakes aren't eggy tasting at all, which I know sounds surprising...it's mostly a banana taste (definitely not a recipe for anyone who doesn't like bananas!) but it's not too banana-ee if you use greener bananas....the riper the bananas the stronger the taste, so if you're not super-duper-pro-banana, go for greener bananas
