INGREDIENTS:
* 1 cup hominy corn/maize washed and soaked in water for at least 4 hrs
* 2 & 1/2 L water (start with 1 liter, add rest as needed)
* Pinch of salt or to taste
* 2 heaping tbsp All purpose flour + 1 cup water as thickener.
Serve this other sweetener of choice to taste, and milk of choice.

So I’m from the Caribbean and we make this same porridge but use yellow Hominy corn. My husband is Ghanaian and every time I make it he says that it taste just like a porridge he used to eat in Ghana. However the Caribbean version uses more spices (cinnamon, nutmeg, vanilla extract), maybe that and the difference in colour why he couldn’t remember the exact name -will definitely show him this video! We are all one people, Caribbeans just having variations of traditional west African dishes based on what our ancestors had/given

Jamaicans must have originated from Ghana because we also make Hominy corn porridge for breakfast. We cook it basically the same way in the pressure cooker and then I transfer it to another pot and add some coconut milk or coconut cream and either cinnamon stick or cinnamon leaf and cook it some more. Then add the flour slurry to thicken it while it is still boiling. We add ground nutmeg, sometimes a little ground mace to help flavor it up some more then sweeten it with condensed milk and evaporated milk and add a little sugar if you want it sweeter. Try it this way one day it is amazing we also add a little vanilla. We make big pots of it because everyone will want some. It is our family favorite porridge.

Yes Jamaicans originated from Ghana...we also eat rice and peas which we call Waakye; Also Dokuno which we call kenkey is also eaten in Ghana.The Ackee fruit can also be found all over Ghana,even though we have no use for it.

My grandmother made this and added butter and molasses. I didn't like it as a child, haven't had it since. I appreciate the video bringing back this memory of her.

Wow I just so love the connection, black folks in the states we eat it ground like you said Grits. My grandmothers both made different versions one let you put sugar in them and the other would pull out a switch if you even thought about it🤣 she mixed egg cheese and sausage. Beautiful memories ☺️

As a child my mom would serve us (the kids) hominy corn out of a can, and I did not enjoy it at all (but I think it was yellow). However, I have been watching your videos (I'm binge-watching right now), and you make food look so good. You make me actually want to try the hominy porridge...but I will have to see if I can find it in the store that way. I have never seen it sold as a grain (just in a can), but then I have never looked for it before either. By the way, I am a vegetarian. Ever since I was a kid, I would sometimes have bad reactions to meat and as an adult it just got worse, so I stopped eating it altogether (It could be due to the way Americans process their meat - or whatever they are injecting into their meat before selling it)...but it is not just meat, I have the same reaction when I am eating asparagus also (which I LOVE...and still crave), but I don't eat it anymore either because I hate being sick. 😢At any rate, I watch different food channels for ideas, but some of the foods you cook I haven't even heard of so I don't know how I would imitate/recreate them. Not that that is a bad thing - I am enjoying your videos all the same (they are so very well put together), and I am learning a lot, which is always a good thing! (The rest of my family are meat eaters so I am sure they would enjoy as is.) Side note: I think my cousin's dad is from Ghana. I will have to ask her to know for sure. He stayed in the states until she graduated highschool and then he moved back to Africa many years ago. Anyway, he made this jollaf rice that was to die for. He claimed his wasn't the best - that his sisters made it better - but if that was true we wouldn't have known because we only ever had his. He tried to teach me how to make it a long time ago, but it never came out right when I made it. 😥 ...but I am not giving up! 😊 When he showed me how to make it, I used to eat meat, in which case he added corned beef to his jollaf rice... I just have to find a vegetarian version that tastes just as good (a recipe that even I cannot mess up. 👀lol)... (honestly, I am not a terrible cook, I just prefer baking instead.😁)

Ive been cooking it recently, but takes just too long, and to get it to hold without getting watery, I use corn meal that I use for koko, but doesnt help much, nooow, u gave me the secret, ashikishan! A savory version in porridge form isn’t in existence in Ghanaian cuisine. I stand corrected though🙏🏽 A savory version will resemble southern sytle American grits👌🏽🙏🏽🥰
