Hi Marion!! I found one of your videos last week and have been watching everything since then. I love your cooking and personality, a true delight. I can't wait to start practicing your recipes, but is not easy to find most of the ingredients in my place, since I'm Spanish, and live in a tiny village in the northwest. I live in the northwest and the climate, culture and geography is really similar to Ireland, since we both have Celtic backgrounds. Spain is multicultural and vibrant, I'm happy you had a good time over here, I hope you'll enjoy the south in your next visit. Ps: I recommend you to watch couple of "spain revealed" (by James Blick) videos in KZbin, a channel about experiencing spain like a local and, as a Spaniard, I can say is a great food-culture guide of my country.

I love Kung Pao (always make it myself) so I'm definitely trying this! Looks amazing. Btw did you toast the peppercorns first or not? I've noticed people always toast them first but I'm not sure if it's essential. I bought ground Szechuan pepper once but I can't find it anymore so I'll have to grind/crush it myself in the future.

Meera-White grape juice: Use white grape juice as a substitute when you want to add sweetness, or deglaze the pan. For a punchier substitute, try mixing a tablespoon of vinegar or lemon juice per cup of grape juice. Chicken or vegetable stock: Substitute stock for white wine when you want to add depth of flavor to a dish.

Hi Marion...tried the recipe today. One problem I had was when I added the sauce to the wok ...it thickened very quickly and became almost solid. Is this because the heat under the wok was too high or I missed a step ? Thank you.
