The last couple of years the stores have been selling diced bacon for seasoning. It is undoubtedly scraps leftover after they make the pretty slices, but it tastes fine and is normally less expensive than sliced bacon. Sounds like it would be perfect for this.

In America we’ve had “ends and pieces” in stores for years, to be used when you want bacon in a recipe like this and don’t want to cut up perfectly good slices. Glad to hear it’s becoming more widespread. Bacon makes everything better!

Hi, coincidentally for some years now I make my meat loaves in a similar way, but with any kind of brandy (cognac or so), a good dash of mustard (and horseradish if I feel adventurous), and not so much bacon in the loaf itself. [I have come to avoid eating meat loaf in other places, because it always tasted and felt like sawdust - like with pesto, I simply am over experiments for certain meals, because my own method brings better results (not my opinion only ;-) ).] Instead of the lining and the glazing I put bacon rashers into the glass (!) casing and fold them over the loaf. If they do not meet in the middle, I put some more on it, so that the loaf is completely covered with bacon. This helps to get it out of the casing, and bastes the loaf from the outside while adding a little crisp to each slice of the dish. But the glazing in this recipe looks tantalizing -> kitchen = lab. I will try it out with tomato paste (double concentrated), a little honey/ balsamico mixture, and mediterrranean herbs and spices, because I do not like the taste of most ketchups, and make my own when I feel so inclined. It took me some years of trial and error, but I also reengineered a sauce for Currywurst = German roasted sausage with a ketchup like spicy tomato sauce, and this seems to be perfect for this recipe! Some pine nuts wil also not be amiss in the meat farce, like in an Ancient Roman sausage recipe that is reproduced by a local butcher at the yearly festival in honour of the Romans and their heritage in the next city. The food at the festival always gives me good ideas for tweaks in everyday recipes ;-) . Oh my, now I am hungry again, thank you for this inspiration, Rik!

All bacon recipes from Ireland are fab so I can't wait to try this one. Think I might try some red pepper flake instead of the black or white pepper. As you always imply.... make it your own!! Agreed! There are some amazing dishes around the UK and Ireland that have influenced the world. The folks that left on their travels years ago took their recipes with them. That's why there are so many similarities around the world. 99% of the folks on here on this channel understand that its the 1 % that cant cook, or are so ignorant to hear how a recipe evolved. This reminds me of when I was a kid in the 90s going to Morrison's supermarket with my parents. Love all this old fashioned simple recipes. Such brilliant comfort food. Sadly I cannot eat onion but I swap it for celery as it has a similar texture. Keep up the good work.

there were 3 things growing up i flat out refused to eat.... bld sausage... liver.....and meatloaf . the meatloaf was literally from th depression era breadcrumbs and meat and a egg thats it. it ws like eating cardboard. you could bury it in ketcup it would still be dry as a bone.... thank you for reviving an old classic

OhMyGosh *OhMyGosh,* I am sooo intrigued, & will make this yummy looking bacony Offaly this weekend, & will serve it with my favorite Irish Colcannon & simple Irish bread recipes...Thank you ever so kindly for sharing what will surely become every bacon lovers favorite meatloaf from now on...BTW, your bacon looks *s o* much better than traditional bacon in all our US largest grocery chains!!!
