One Loaf Oatmeal Bread -

Recipe Ingredients : 2 1/2 cups bread flour, or as needed,
1 cup + 1 TS rolled oats, 2 1/4 tsp active dry yeast,
1/4 cup water, at room temperature, 2 TS sugar
1 cup milk, at room temperature, 1 tsp salt, 1 TS shortening,
1 large egg white,
following by all step-by-step
1. In a large bowl, mix the warm water and yeast together until the yeast is dissolved.
2. add the milk, sugar, salt, and shortening. stir / add the oats and mix well. add in enough bread flour to make a dough that follows the spoon or fork around the bowl.
Tip 1: When sugar is added to dry yeast, it acts as a food source for the yeast. Yeast cells consume sugar through the process of fermentation, producing carbon dioxide and alcohol as byproducts. The presence of sugar provides yeast with readily available energy, allowing them to multiply and ferment more rapidly. This increased fermentation rate leads to faster growth and rising of the yeast dough.
3. Turn the dough out onto a lightly floured surface and knead for
10 minutes, / smooth to the touch
4. Place the dough in a medium greased bowl(any cooking oil ok! - I used avocado oil) cover with plastic wrap for 1hr.
Tip 2: If you don't have a fermentation machine, the dough will ferment well if you use an oven with the light on for 2-3 hours.
5. Punch down the dough, turn the dough out onto a lightly ,knead for 5 minutes or until the bubbles are out of the dough.
6. Shape into loaf and place in a greased 8x5-inch bread pan.(or any loaf pan, if desire) / brush egg white on the dough.
* If use a cast iron pan, the surface of the pan is thick so the bread won’t burn.
7. Bake: preheat 375°F(190°C)
40-45 minutes, after 25 minutes, turn halfway around for bake evenly.
Cool down - remove bread from pan and let cool on a rack. at least 1-2 hrs.
*Tip 3: Very delicious with cream cheese or your favorite jam!
