We’ve taken up following your recipes and, so far, have found them do-able and very tasty. The Orange Cake was no exception. Simple to do, healthy and a beautiful flavour. We’re impressed! Definitely going to make this. I have a similar recipe for gluten free brownies, they are super moist and steal the show every time when I bring them to work. If I had an orange I’d be in the kitchen already. Here’s the recipe in case anyone is interested, usually gluten free or special dietary cuisine doesn’t measure up to the original, but since I discovered this recipe I have never baked them any other way 200 gr Sugar 200 gr ground almonds 1/2 Package baking powder 1 package vanilla sugar and a pinch of salt Mix together and add: 200 gr melted butter 200 gr. 70% dark chocolate melted. Let cool a few minutes and add 4 eggs. Bake at 150C for about 40 minutes. I use a 20 x 20 cm glass baking dish

Mr. Paul's Pantry I would be honored if you tried my recipe. The baking powder comes in 15 gr packets, the vanilla sugar packets are 8 gr. If Vanilla sugar is not available (I live in Germany) I think a few drops of vanilla essence will also do the trick. Hope you enjoy 😊

Amazing! This is the first time that I have seen this method! I am surprised to see how much the cake rose up! It looks delicious, it wasn't to difficult, or time consuming, I am eager to bake this cake! I am wondering if this would work with lemon and or lime? Also, if I wanted gluten (ha! ha! ) would a. p. flour work as well? I am assuming it would affect the texture, but hopefully not to much! I am preparing to boil my orange now!! I am pretty certain that using lemons and very probably, limes, would work with this method. I used to make both lemon cakes and orange cakes many years ago, never tried it with lime in all honesty, Mr. Paul? What do you think?

I used to make orange cake (and lemon too) many moons ago, and I also used to make a lovely orange (or lemon) sauce to drizzle over, which was awesome! Unfortunately, due to illness etc, I kind of lost interest, and also with many house moves, ended up losing a great many things, including favourite recipes. Orange sauce included! Do you have a good recipe you would share please? And by the way, your cake looks a whole lot easier, than I remember making mine! lol! So a definite try for me! Thank you for sharing this!

What would you say if I substitued almonds for walnut? as almonds sold here are not so good really, they tend to be old, like they keep them on the shelf for a very long time as they are dreadfully expensive here and you never know if those were gathered some 5 years ago...

Hi Nick, I'm sorry, but as I have 75 Almond trees myself here in Spain which supply my bakery I've never tried using walnuts instead. The problem I can see is getting the walnuts to the correct consistency because when we have tried grinding our own almonds they never work. This is due to getting the moisture content just right prior to grinding. In fact we send all our almonds to the factory to have then de-husked, shelled, skinned/blanched and ground. By the way Nick, that's the reason almonds are expensive the world over, it's a lot of processes they have to go through. I'm sorry I can't be of more help, but I wish you well. If you used erythritol or monk fruit rather than sugar you could serve this to anyone doing keto or low carb too. As a rough calculation, if you cut it into 12 portions, that will be around 2, maybe 2.5 net carbs per slice! I’m not doing keto anymore but anytime I see a recipe that’s so easily ketofiable I can’t help but count the carbs lol. I do still use the sweeteners instead of sugar as they taste fine to me so it makes sense to use something healthier, although I don’t dust with erythritol powder on top of something as then I get the cooling effect. But I figure if I’ve used erythritol in the cake and then just dust a little real sugar on top, that’s better than using all sugar.

Whilst I do encourage everyone's comments here, I must point out these are your (the public) views and not necessarily mine. There is one major caveat to most sugar alcohols - they can cause digestive issues. Erythritol side effects typically include digestive problems and diarrhea . It may also cause bloating, cramps, and gas. Additionally, erythritol and other sugar alcohols frequently result in more water in the intestines, causing diarrhea. Nausea and headaches may occur as well.

Cooking the orange is a trifle lengthy, could it be reduced in a pressure cooker or microwave. We're all looking to cut down on the cost of power now as much as we can. I'm really thinking that we should try. The cost of power in Spain is a little less than ours in the UK. Well it is in Portugal where I've stayed with friends a couple of times where we discussed their living costs. Ours are double what they were last year and it's terrifying. Any tips you can think of would be helpful. If you can't, then I will carry on and experiment.

I've not tried, these are recipes we used in my bakery, now I live alone and have diabetes, these are things I don't make for myself. However, if you do try it perhaps you would be kind enough to share the results. Sorry I can't help more.

@@MrPaulsPantry I live alone too. I don't have diabetes but my Father did and couldn't have medication. I cared for him for 5-6 years when he got Vascular Dementia. I cooked everything from scratch for him. But now what? So I live alone since my husband died, I want a nice piece of cake like this orange cake now and then, so into the freezer it will go, maybe in small pieces. I'm thinking to bake in a loaf tin, that way it's easier to portion. I will try doing the orange in an Instant pot and see how it goes... I'll let you know when I've done it. I'm working through the second part a date and walnut cake at the moment. The Orange cake will be next :) Never give up, I'm buying cream in the hope I will put some weight on... I have too many bones near the surface for my liking... haha.

I am in the experimental stage with this cake to keep the costs down. But before I go into it more, let me say this is the best cake I've ever made, even though I played around with it a little. First saving No.1. I cooked the orange in my pressure cooker for 45 minutes. Saving no.2, I didn't have any ground almonds, I just had 100g of slivered almonds. No problem, I put them in the blender and made them into ground ones. But it was a bit short on weight, so I replaced that with flour. The result was so fabulous I gave some to a neighbour and told her to follow Mr Pauls Pantry. I'm a bit sad really as I want this cake all to myself.. LOL Small Edit: I had some cake left, a couple of servings, but when I looked at it, there was mould, so I had to throw it away then. I now realise that the liquid (orange juice) was making it moist and that encourages the growth of mould... Solution, cut it in half and freeze it, it will NOT happen again. 😋

It all depends on the Almond Flour you use. Good quality almond flour has much of the oil removed, this allows it to be ground finer. The big downside to this is the defatted almond flour contains almost three times as much Carbohydrate as ground almonds, For anyone with diabetes is very bad news. As a commercial baker I've tried using both these almond products and personally found no difference apart from the cost. Plus, with the lack of oil you don't get that nice moist feel to the cal with rice flour. Now, of course I live here in Granada, Spain and have on my property 75 almond Trees so I always use Ground Almonds now,
