I am so happy that you visit my hometown nanjing. I think nanjing food is more acceptable by foreigners because it was not so spicy and oily but more fresh to keep the original flavor of food which was more healthy. But different part of china has different cultures and different backgrounds so that makes the diversity of cultures of china. I also highly recommend Suzhou and hangzhou. There's a number of these aesthetically pleasing restaurants serving local foods mainly for tourists. I think it's a great idea. I've been to a few of them myself and generally they do a pretty good job, while they're not always comparable to the authentic hole-in-the-wall places locals go to, they do make it easier for non-locals to dive into local cuisine. i went to one in Xi'an called 遇见长安(Encountering Chang'an) Chang'an being the old name of Xi'an. And while i've had some of the dishes already in more local places, it was still a lovely experience and the food was pretty good for a pretty and clean place in the mall.
