Our Week of Dinners: 04/22/24 to 04/27/24

Welcome!
We are a homesteading, homeschooling family of 7. Due to recent events (job loss/career change, health issues, rising food costs, etc.) we are having a hard time making ends meet despite our best efforts at frugality. So we are tapping into our local food banks to help us feed our family. Come along as I show you what we are blessed with, what we add to it via grocery store and garden, and how I use it all to nourish our bodies.

Apple Snickerdoodle Muffins
1 1/2 c. sugar
2 eggs
1 c. oil or applesauce
1 tbsp vanilla
3 c. flour
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
3 c. diced apples (peel is desired)
Combine wet ingredients. Add in dry. Mix until just combined. Batter is very thick. Optional: sprikle tops with cinnamon sugar. Bake at 350' for 20 to 25 minutes. Makes approximately 18 muffins.

Long story about the smell of grandma’s kitchen. I went yard sailing this weekend and picked up a couple candles that smelled like cookies and pies. Then I saw some Canadian meadow garlic growing on the side of the road and I love alliums so I had to stop and dig some up to take home and plant in my garden. Every time I got back into the car I was 5 again sitting in my grandmas kitchen while she was baking cookies and cutting onions. 😂 Smelled SO good!

I like potato pancakes too. Yum. Recently, I used up some leftover mashed potatoes by adding some bacon bits cheese and sour cream. It tasted kind of like twice baked potatoes. Thanks for sharing your dinners.

Oh my everything you made this week sounded so yummy. I know what you mean about everybody cutting grass or plowing their fields like you say out here in my neighborhood I don't live in the country but in my neighborhood one day last week I swear every single neighbor decided to cut the grass all at the same time pollen was flying everywhere and I didn't really think about it when I put my dog out and I walked out into a big cloud of it was not fun😅😅

You’re welcome for the rinsing suggestion. I’m glad it worked! For end of the barrel ingredients, that all looked yummy. The broccoli, cauliflower, carrot combo and the fruit combo looked the best to me. Nothing wrong with using stuff up to extend the shopping trip.

The sheet pan meals left overs go well the next day on a wrap with some cream cheese and hit sauce. I do the same thing with all my extra veggies.

Yum! You take such good care to f those kiddos meals! Starting tomorrow I won't be able to use my kitchen due to a major plumbing problem that will take a minimum of 3 days and possibly (pray please it doesn't) up to a few months.

Thank you so much the prayers! They are working😇 god has been by our side guiding and protecting! tonight after having an emergency over night evacuation due to toxic sewer gases building up in the house my crock pot was my saving grace for dinner but we can't wash it due to the sink being in the sectioned off area so gonna have to see where I can bring it tomorrow to wash it 😂
