Your dish looks fabulous. I just came a cros these humongous beans, which i did not know what type they were.so e were purple also but very large. I cant wait to try the recipe. My beans were shell from the bean which does not need to be hydrated, so i wiill try your recipe. Thanks.

Could you use celery leaves?

Celery leaves tend to be quite bitter and powerful Carolyn, so if you can't find celery herb you're better off using the stalk and cooking it at the beginning when you're softening your onions. xx
