3 pounds of oxtails, 1/4 teaspoon cayenne pepper seasoning, 32 ounce chicken broth, 32 ounce beef broth, 3 tablespoons kitchen bouquet, 3 cloves garlic (just buy minced for ease), half an onion, 1 tablespoon Worcestershire sauce, liberal salt and pepper. Goal is to cover the oxtail with liquid. If not covered add water until they are. High Pressure cook at 40 minutes. Then 20 minute natural release followed by quick release the rest. Rice cooked separately. Pour broth over rice. :D

I am from Florida and really like "Southern" style better than Jamaican so thank you so much. I won't have to go to my favorite "soul food" restaurant to get these at $16.99 a plate, if I can afford to buy the oxtails. I'm almost 80 and really can remember when you could get these for about 39 cents a pound. My, My how times have changed. Same goes for ham hocks, etc.

Hi John I love all of your recipes in the Foodi. I bought a Foodi mainly to do oxtails in it because they take soooo long to cook the normal way. I have not done it yet for fear that they would not be flavorful. I think that comes mostly from when I cooked some years ago in a stove pressure cooker and they cooked quickly but had no taste. I think I may have put too much water in the pot but I will be trying this recipe. Thanks for sharing

John- Finally tried your Oxtail recipe. 👌 Really amazing flavor, but I think a new car is cheaper than one pack of Oxtails! (LOL). Heard so many people rave about the taste, I just had to try it. For those who haven’t tried it before, it’s worth making, but cost-wise, it’s not something you would want to make every week!

Oxtails are some what pricey but the flavor and the gelatinous texture is hard to beat...maybe once every couple of months for me though..thanks for watching and sharing your results!!!

Like many who have commented here, I’ve always steered ( no pun intended) away from ox tails, based on the name alone! (LOL). The name just doesn’t sound appetizing- sounds like they would have a lot of bones in them- but they sure look good in this recipe. I just may have to take a leap of faith and give ‘em a shot!

I’m usually not one to go into anyone’s video and leave a negative comment or critique because I figure that everyone’s got their own way of doing things so who am I to judge...with that said come on man you know damn with that those are not “southern style” oxtails...southern style oxtails are classified by the gravy....and are generally coated in seasoned flour and pan seared before cooking ...you didn’t even separate the fatty oil from the “gravy” that was still in the pot...wow you know that oxtails are on the pricey side and to lead people astray like that is just plain wrong...I promise you anyone that makes oxtails the way you described is doing themselves a great disservice....smdh

I totally agree, especially with the gravy comment but that is why I mention how easy it would be to do a couple of times in the video, I was actually more interested in showing how easy it is to cook really good oxtails in a hurry that in my opinion doesn't need gravy everytime, just rice.. but by all means if you have the time I would encourage people to make the gravy... but, I honestly feel bad that you didn't enjoy the video... sorry about that but thank you for watching and commenting..

That's the oil from the.oxtail you should take some about the add the mixture of flour and water or cornstarch add to to make the gravy because right now all you're eating is the grease not juice

stephanie holmes I made some last week in the instant pot for family dinner with red beans and rice. But I stretched the meat by adding some cubed chuck roast. I also browned the meat before pressure cooking it. My family is Caribbean and has been making this in pressure cookers for years. I’m old enough to remember when the butcher would give away the oxtails to my mother for free! How times have changed! Best of luck with your meal.
