Good explanation. I was always curious on how to use bones in objects. Anymore advice like this for rigging or animation would be appreciated.

Cool. you will have to wait till next one. The rigging course will cover this one for sure. I also plan to make an animation course on next year. But it's just a plan for the time being as I need to finish the rigging one first and make some money with commissioned project first.

What would make this better is to combine the rig with the ability to be dynamically parented between the right hand, left hand, and no hand (or maybe a third “free” parent)

It's already the case. It can be snapped to hand rig automaticaly. It was not the point here ^_^'

I'm using CAMSTASIA. It's very easy to use and works well. And it is not super expensive.

Yes but just for transformation in your viewport. You can't use it in animation. If you use the 3D cursor with an offset from the bone head to rotate it, it will record a rotation for sure but also translation information. and that will be a pain to deal with.
