but these becomes hard after few hours

There are two reasons of appam turning hard- 1. The batter may not be nicely fermented. 2. The yeast may be old or expired. Hope this helps. Otherwise these appams remain soft for over 6 hours. (Use a casserole to keep the appams softer for longer time)
