This northern Thai dish called "gaeng ho" originated from people repurposing leftover curry and turning it into a glass noodle stir fry. Traditionally Thai people use leftover "gaeng hung lay" which is a popular northern Thai curry, but in this recipe I share with you how you can get those flavours without having to have any leftovers!
It's a quick and easy meal that can be modified to your heart's content. Use any kind of leftover curry as the sauce, change up the veggies and protein, what's important here is the glass noodles!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. As a northern Thai citizen, when we has a big Buddhist ceremony or festival every family will take food their cooked from home to join another at temple in morning for lunch (the popular dish are Poke curry-แกงฮังเล, Glass Noodle curry-แกงวุ้นเส้น and Steamed wrap-ห่อนึ่ง). but the food too much to eat all of them. when the time past to afternoon the food will start to get bad smell and start to spoil, so their pour all of them in big big pot to cook it again with lemon grass + kaffir lime leaves to cover bad smell. after cooking [Harmonious Stir Fry Curry] finished everyone will share this food to each other for dining at their home.

Yes, the reason it's called "Gaeng Ho" or "mixed up curry" is not just because it is mixed up left over dishes. It is mixed up with many dishes from many houses of a neighborhood as well.

if youre diabetic you should be on a keto diet, glass noodles are way too high on carbs, you're torturing your body.

@@nofood1 Don't reccomend things that can be dangerous. For some diabetics- keto is fine, for others, it makes their diabetes much worse.

Well done Pailin. I'm Thai but not very familiar to Northern food. If I can find those vegetables I will give it a try one day. I'm on Keto diet and this dish with Shirataki noodles instead of glass noodles will turn into keto friendly recipe.

Hey there!! Thanks again for an awesome recipe. So, I never seem to have kaffir leaves available so I substituted for zested limes. Just curious how much lime zest should I be subbing for leaves? Also, I used eggplant instead of a hearty leaf. Thanks for an awesome and fairly easy Friday night highlight.

You provided the perfect inspiration for tonight's meal. Since I already made rice (the short grain NE Asian type), I need to make something that's closer to a more dense curry that will go well with this kind of rice. Would this work well with any kind of curry? What kind of leftover veggies would you serve with, say, green curry?

It's quite common food among us Northern Thai krub, not just Chiang Mai where I live. You can copy (with quotation marks) and google for "Kaeng Ho" from Northern Thai Information Center via Chiang Mai University online library (lannainfo.library.cmu.ac.th). They also have a lot more recipes of Northern Thai dishes in both Thai and English

Kaeng Ho, or Kua Ho, is a northern Thai dish with the word “Ho”which means it is a dish that brings together various dishes. Originally made from leftover food then add a seasoning as you like But nowadays it is popular to use fresh produce and use”Hang-le curry” as a seasoning,Ho curry may be derived from Burmese Hin Lei or Hang Le Curry. Expected to happen at the temple Since during important religious festivals such as Buddhist Lent Day, Songkran Day, villagers will bring a lot of food to the monks and due to there are a lot of offerings food the monks are unable to eat them all,in the past there was no refrigerator will let it waste, it feel a pity Then the food that is offered is good food such as steamed wrap(pork,chicken,beef), grilled marinated pork , Gaeng Om(spicy northern Thai clear soup with pork,chicken or beef), spicy minced pork salad,Si-ua(Northern Thai sausage), and maybe some curry with coconut milk. The”Makkatayok”(Churchwarden)brought those food to mixed together and fill it with water and pour it out to remove some of the spoilage,set the heat and stir in oil, add salt, fish sauce, fresh chili or Thai paprika then add additional ingredients such as vermicelli, bamboo shoots and flavoring by adding kaffir lime leaves and lemongrass. Nowadays, the freshly made Ho curry not using the leftovers to do It will use lean pork and vegetables such as Chinese cabbage, cabbage, long beans, gourd, pickled bamboo shoots, vermicelli, eggplant, kaffir lime leaves, seasoned with chili paste consisting of fresh chili, onion, garlic, salt, shrimp paste, pounded together thoroughly. Stir-fried the ingredients and add enough vegetables and water Simmer dry, add vermicelli, sprinkle Thai paprika and kaffir lime leaves.🤗🥱😊

I agree that Pine Brand is the best. They make the chewiest glass noodles ever. And there are two varieties: green and white. What exactly is the difference? Are the white ones bleached or simply made from shelled mung beans?

White is bleached and green is natural colour. They don't make a difference in the dish though.

@@niamtxiv , Chinese or at least in some Chinese regions. But this isn't usually observed unless at certain celebrations like birthday and new year where it is not typical to cut the noodles deliberately just so as not to suggest a shorter life.

Cutting noodles is only bad luck when it's wheat base noodles (ie 麵 "mian" which sounds like "life/longevity"). Glass noodle is classified as "fen" so cut all you want.

No. There might be some glass noodle which made of other plants like sweet potato, arrowroot, or tapioca starches but the most common glass noodle is made of mung bean , while rice noodle is made of...well, rice.
