A healthy and easy fish recipe that's great for any kind of white, mild flavoured fish. I'm using black cod (also known as sablefish) because I love its tender flakiness, but in Thailand barramundi is the most common type used. Chewy mushrooms and spicy ginger makes this one of those dishes that's just hard to stop eating!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. She currently lives in Vancouver, and goes to Thailand every year to visit her family. Visit her at hot-thai-kitchen.com

Palin I've tried many of your recipes. They're awesome thanks! can please add a little suggestion on this recipe? My mum (she's Chinese) never throw away the liquid that comes from the steamed fish. It contains natural goodness. Instead of using the liquid stock I much rather use the fish natural stock. I mean the sauce doesn't take long to make anyway. So we can start frying ginger and garlic while steaming the fish; once fish is done; add the fish stock to the sauces. But That's just me (how my mum taught me) 😁

Made this for the first time this weekend. Halibut was on sale! My mom made this for herself often when I was a kid but I never partook being an "american" kid and not much into fish when I was young. This dish is awesome and my new favorite. Thanks Pai!

I made this just an hour back with halibut. I used japanese sake cooking wine in replacement of rice wine since i dont have rice wine but still turned out so delicious!

in the Pacific islands we use the whole fish head to tail like a parrot fish or grouper no wasting. no steamer needed, wrap the fish in foil add the sauce with chopped lemon grass and steam over a wood charcoal fire when done open top portion of foil then garnish. I normally put the foiled fish on a platter and eat from there. add peppers for spice. You will taste the Smokey flavor.

We usually will add one important ingredient which is Chinese dried tangerine peel to the fish which gives a sweet favour with the soy sauce. Good job.

I grew up eating steamed fish in HK and never really enjoyed it all that much. However the 2 ingredients that turned around my interest are dried orange peels and shiitake mushrooms.
